When I was studying in the UK, my flatmates used to question why I would make such a massive breakfast. I had to explain to them that this is how we roll! So when I put my plate of nasi lemak with fried chicken and egg next to their cereal & milk, eventually they had to succumb to the appeal of big Malaysian breakfast!
And I see that you've embraced that too!

I just learn to eat Nasi Kerabu 9 months ago, after watching so many TH-camrs ate it, even many locals have not tried this dish and I'm a local. The first time I am a little taken aback coz it is very different from other rice dishes like Nasi Lemak, coz it has a strong herb taste from the salad, but after a week and I'm more adjusted to the taste, now I even like it more than Nasi Lemak. My fav combo for Nasi Kerabu is with solok lada and fried chicken.

Kak Anne Nasi Padang, Shah Alam. The only other state I found the dish was in Johor and even then it was a rare find.
Perak : Mee Udang / Kari Sembilang ( my must-go breakfast place whenever hanging out in Perak state is Pak Ngah Ali restaurant but show up at around 7-8 am. It's so popular, full of people even so early in the morning. Fresh and clean catfish curry. Rice and curry so early in the morning???? That's exactly why the fish is so fresh. It's worth it. )

I like that you try Malay food in Malaysia, I know this is weird but many tourists eat only Chinese & Indian food in Malaysia which is nothing wrong as they are also part of Malaysia cuisine but Chinese & Indian food are very popular around the world since they have very large diaspora especially in the western countries
This is also the lack of Malay food in the downtown area in Kuala Lumpur and tourist area, usually Malay people live in rural area
I hope my fellow malay people open a lot of restaurants in the downtown area like in Bukit Bintang and serve food like Nasi Dagang or Patin Tempoyak, because this kind of foods is rare and uniquely Malaysia

Actually there are many restaurants and food stalls operated by Kelantan, or any other state people, especially here in the main city of Kuala Lumpur. So, you can expect to see authentic foods from every states here in Kuala Lumpur. Try also Melaka, Negeri Sembilan and Johor foods. Very unique and distinctive from Kelantan foods. My favourite is one of Negeri Sembilan foods called Masak Lemak Salai (Smoked Spicy Curry) where the chicken/beef/fish smoked and then drenched in a spicy curry. Some is very spicy but also very savoury. You should try it. At Selangor, some of the best Masak Lemak Salai are Itik Salai Masthar and Salai Master

If the coconut does not taste good, it effectesmd the taste of Nasi Kerabu. You dont need any other condiments if coconut sambal was so good.

The most correct way and delicious way of eating Nasi Kerabu is to MIX everything together, just like the korean bibimbap. You have to take the salted egg off of its shell, mix with the rice, veggies, sauces, and also the fish crackers. Use your hands to crumble the crackers and mix it with the rest. You do not have to mix the chicken, beef, solok lada and pickled garlic.
