About to attempt making this (wish me luck) so I took some notes in preparation. Here's a kinda-sorta-recipe for anyone else who wants to try this! Brad and BA, we love you, thanks for making these videos and please never stop! Dry Rub: Mustard powder Onion powder Salt Pepper Cayenne Coriander (ground) Filling: Squid tentacles, minced Shrimp, minced Scallions (3), chopped into thin rounds 4 cloves of garlic, microplaned 1" of ginger, microplaned 2-3" of lemongrass, sliced into realrealreal thin rings ½ fresno chili, minced 1 tablespoonish of ponzu sauce 1 tablespoonish of gochujang 1-2 tablespoonsish of olive oil Pinch of dry rub Black pepper Rice: 1.5ish cups of white rice, cooked Furikake Additional: Parsley and [cilantro, tarragon, basil, or thai basil] Another splash of ponzu Another splash of olive oil PREP TUBES Put tubes in bowl 1, add dry rub + pinch of salt, toss to coat PREP FILLING Put minced tentacles and shrimp in bowl 2, add chopped scallions Add microplaned garlic and ginger to bowl 2 Add lemongrass slices to bowl 2 Add minced chili to bowl 2 Add ponzu sauce to bowl 2 Add gochujang to bowl 2 Add olive oil to bowl 2 Add healthy pinch of dry rub to bowl 2 Add black pepper to bowl 2 PREP RICE Put white rice in bowl 3 Add some furikake to white rice to coat lightly COOK FILLING Saute contents of bowl 2 in a nonstick pan on medium-high heat to cook shrimp/squid and reduce moisture. Color will darken a bit. MIX STUFFING Dump sautéed bowl 2 contents into bowl 3, mix with rice Chop some parley and cilantro or tarragon or [Thai] basil, put in bowl 3 mixture Add an extra splash of ponzu and olive oil to bowl 3, mix FILL THE TUBES Put bowl 3 contents (stuffing) in bag, cut off dime-size tip Fill each tube about halfway with stuffing. If both sides have holes, put less in and center the stuffing. GRILL THE TUBES Heat grill on HOT Put stuffed tubes on grill, roll frequently to get even browning, use tongs to keep mixture inside (A COUPLE MINUTES TOTAL) Don't forget that mixture inside is cooked so you're basically just searing the tubes Char the sides by placing tubes parallel to grill grates Before removing, sprinkle with some more dry rub (to achieve pyrotechnics) Serve on hot dog bun with ketchup
Our ideas of the proper/improper way of doing things is a construct. When it comes to food, many of those constructs are useless. Language, society, and others have much more useful constructs that cause problems when you deviate from them too much or too often. So eat everything with your hands, use utensils as drum sticks, whatever; because honestly who the hell matters enough to say that it is wrong if you look like a "buffoon"? Go for it...
Brad, If you turn the squid tubes inside out before filling, the opening will curl inward when it hits the heat, thereby sealing in the stuffing, and allowing for more stuffing (though I'm sure that the excess stuffing did *NOT* go to waste!)

We don't usually see him just straight up cooking, most we usually see him using a knife for is releasing allicin. You're right, it was really impressive, speed and precision both on display.
Honestly that would be amazing and would actually put me to sleep. I don't have that ASMR tingles but certain sounds that are kinda repetitive (like chopping stuff, banging a spoon on a pan, etc) is so soothing to me.
Gotta love how Matt, the editor, introduces us to important yet sometimes un-noticed people like Drexel Dash & other people he puts a pop up about!! More of that in the future too please 💜💜

I love Brad. Not only does he make delicious food, but he seems like a really genuine, down-to-earth kinda dude and has an amazing sense of humor. Also, he has great taste in knives. I wish I had a quarter of the nice knives I see in his videos.
Chris was in a great mood in this episode and it's one of those episodes I come backI to watch again, specially cause Chris' face lights up at the end with the squid surpassing expectations and praising Brad. Plus it's Brad which has such a bright personality. Wholesome content ❤️

@@Szanth fermented hot sauce is nothing like gochujang. Gochujang takes 6 months to ferment and to do it authentically requires a very specific pot and ingredients. It would be a really interesting video.

@@dpend First time I saw Chris in a video (or any BA video in general) was when Claire was doing Kit Kats and my first impression was that he was a kind of know it all unfriendly person but oh man I am so happy I was so wrong because he is truly amazing. I love how he always asks Claire "what do you want" when she has him try something meaning does she want critiques/constructive opinions or just praise and encouragement. Also on almost every episode of his show Reverse Engineering he is coming around on his grocery cart in the store when shopping for supplies and has a funny banter with the crew and their "lack of help" since clearly they can't give him help. As someone once commented Chris is an old man and a 6 year old at the same time, which I think makes him one of the best humans.

There's a colorful history associated with the phrase and he chose it because of its connotation of variety, especially a variety of underdog features like the flavors in the dish. Downgrading it to "rogue gallery" loses the imagery. Really, what a waste of effort this whole interaction was.
So fun to watch and learn, Brad has a great personality and bring's a relaxing atmosphere to the kitchen. At least he does online. Thanks for bringing us your channel and cooking skills.

@@Szanth fermented hot sauce is nothing like gochujang. Gochujang takes 6 months to ferment and to do it authentically requires a very specific pot and ingredients. It would be a really interesting video.

@@dpend First time I saw Chris in a video (or any BA video in general) was when Claire was doing Kit Kats and my first impression was that he was a kind of know it all unfriendly person but oh man I am so happy I was so wrong because he is truly amazing. I love how he always asks Claire "what do you want" when she has him try something meaning does she want critiques/constructive opinions or just praise and encouragement. Also on almost every episode of his show Reverse Engineering he is coming around on his grocery cart in the store when shopping for supplies and has a funny banter with the crew and their "lack of help" since clearly they can't give him help. As someone once commented Chris is an old man and a 6 year old at the same time, which I think makes him one of the best humans.
In today's episode Gabbi shows off her daily routine at the test kitchen, while Brad cooks something in the background.
"I love to hear what you guys do with squid in the comments" - nearly every comment is about Gaby or Chris 😂
