    Veggie Pad Thai RECIPE:
    8 ounces flat rice noodles (labeled pad thai, M, or L)
    2 tablespoons fish sauce
    2 tablespoons oyster sauce
    2 tablespoons packed brown sugar
    2 tablespoons tamarind puree
    1 tablespoon avocado oil
    3 cloves garlic, minced
    2 shallots, minced
    1 carrot, shredded
    1 cup shiitake mushrooms, sliced
    1 cup canned baby corn
    1 baby bok choy, leaves separated
    2 eggs
    Bean Sprouts
    Roasted peanuts, crushed
    Cilantro
    Green Onions
    In a large bowl, add rice noodles and submerge in hot but not boiling water. Let it sit for 5-10 minutes until it becomes soft and pliable. Once soft, stir so the noodles don’t stick together. The noodles should look opaque but still al dente. Drain, rinse and set aside.
    In a small bowl, combine fish sauce, oyster sauce, packed brown sugar, and tamarind puree. Mix well and set aside.
    Heat a large wok on high heat, drizzle some avocado oil and let it get hot. Add the garlic and minced garlic and stir fry for 2 minutes until fragrant. Add carrot, shiitake mushrooms, canned baby corn, and cook for another 2-3 minutes until the carrots are tender. Add the eggs and scramble with a cooking spoon. Mix with the vegetables and add baby bok choy, rice noodles, and ½ of the sauce. Continue mixing until the noodles have absorbed the sauce. You can add more sauce to continue cooking the noodles down or leave as is. Let the sauce come to a boil and the noodles should be soft and perfectly cooked.
    Transfer the cooked noodles to a plate and garnish with bean sprouts, crushed peanuts, cilantro, and chopped green onions.
    Take it from me:
    If you want to make this fully vegetarian, substitute soy sauce for fish sauce, mushroom sauce for oyster sauce, and soft tofu for the eggs.

    My favorite Thai dish. Every time I go to a Thai restaurant I say I’m going to try something different but always end up with veggie pad Thai extra tofu… yum 😋. Def will be trying your recipe

    Thank you for the recipe! Going to try it this weekend I have fresh rice noodles and tamarind paste. I’m plant based so I don’t use fish sauce, but I bought a bottle of Fysh sauce on Amazon that I’m really enjoying (seaweed based) in case this can be helpful to anyone

      Thank you! I watched this and when she said "if you want to make it completely vegetarian, you can leave out the eggs," I thought.....umm pretty sure fish sauce and oyster sauce aren't vegetarian.

      Same 🥺 doctor told me when pregnant tamarind can overdose you in vitamins. You have to eat it in small amounts so I don't know if I could make this lol

    I'm from Egypt and I'm making a book about authentic food recipes. If I removed the bean sprouts from pat thai and replaced the chives with green onions and used the noodles you made but cut thinner, would it be an authentic pad thai recipe?

    If you use fish and oyster sauce, it's not vegetarian but I'll try it without those ingedrients

    I tried this today and it didn't come out nice at all... I think the quantity of the mix needs to be looked at.. the rest of the stuff is pretty simple to assemble.

    Please note that adding oyster sauce and fish sauce don't make a veggie Pad Thai!

    Unfortunately this is not exactly vegetarian with the fish sauce and oyster sauce in it :( But it looks delicious though!

      You can always get vegetarian oyster sauce and fish sauce! They make those now, I've seen them at Asian groceries stores.
