This quickly became one of my favorites. Big garlic hit, chili hit, dark green veggies, fat rice noodles, Chinese influence (invented in Thailand by Chinese immigrants). I only make it with beef but that is me. This dish is incredible.
I use beef as well, and the only veg I use is scallions and quartered tomato (plus Thai basil at the end). The tomato adds a acidic punch and gelatinous feel.

Never forget a nice Sunnyside fried crispy egg on top! Tip: I usually had problems getting an even coating of sauce all around the noodles. So I've actually marinated and massaged the noodles with all the sauce I need to cook for that dish separately, before adding them to the wok.
I made your vlear chicken noodles soup for my mom today, I love noodles soup especially when it's a cool rainy day. I will make this dish with thin rice noodles tomorrow. I'm lucky to have Thai family owned restaurant not far from my home. I usually get this dish and the sweet black soy sauce wide noodles dish. My mom is from the same part of Thailand as your mama Noy. She misses her Thai street food everyday. I Love watching you and your mum cooking together.

I'm quite aware of my diet and I cook and eat it every now and then. My tips are try to get dried noodles as those aren't greased, go easy on oil (a well-seasoned cast iron or wrought iron pan is your friend) and seasoning (I skip the sugar), and add tons of veggies.

We ordered this the other day, and loved it, for the first time we had the option to order it medium instead of 5 chillies hot, so good to be able to make it but customise the fire level!!
I've made this dish at least twice now and it satisfies my cravings for prawns + spicy anything every time! I'm making it for my birthday because I happen to have rice noodles lying around in the kitchen 😋
No matter who I watch make this, they have the coughing fit! I thought it was just me who isn’t used to working with fresh chilies! I first had this dish delivered to me at the start of the pandemic from our local Thai restaurant. They call it Crazy Noodles, I guess because it’s more inclusive for people in recovery? But whatever it’s called, it’s delicious, and I had to learn to make it or I would be eating out all the time! One thing I figured out is that if you have to use Italian basil, you can grind a pinch of anise seed with the garlic and peppers, and you get a closer match to the flavor of the holy basil.

The noodles for this are IMPOSSIBLE for me to find even at Asian supermarkets I've been to. But even without the exact noodles this is in my top 5 favorite dishes of all time. Shout-out to Laut in Manhattan.
Drunken noodles are my FAVE💜💜 I’ve made a few variations after the restaurant I discovered it at closed 😭 been close... but not perfect, so I’m on the hunt for a better recipe and we like it spicy and yummy! Excited to give this one a go🤓👍🏻
You can buy Holly basil plants a Bunnings, they are called perennial Basil. It's strange you can't buy commercially in Australia considering at grow wild in the north regions of the country.

A little squirt of white vinegar will make the noodles separate easier. I also like a raw egg on the top before serving. I also brown off my noodles first with a dash of dark brown soy sauce and put them on the serving plate. Everything else goes on top.
My favorite Thai place closed over a year ago and they had the best drunken noodles. I have been craving them so bad so I'm going to try to make this! I've found thai holy basil at my local Hmart and I can probably substitute some Korean chilis.
