    I made this....very good! I used xiao mila peppers for the red pepper flakes....very nice.

      Lasse's Food and Barbecue it’s different than regular bbq sauce, but it makes my mouth feel alive lol.... it’s got a really fresh taste.... try it

    I’m 54 years old, lived in eastern NC all my life and eaten a lot of eastern NC bbq and I’ve also made a lot of the sauce as well. I’ve never heard of anyone putting brown sugar into the Eastern NC style sauce. Not saying it’s wrong, just not typical. I bet it’s good though!

      Allen Royal it is good, I’ve have seen lots of recipes without out any brown sugar in it, some with just a 1/4 cup also seen many with white vinegar.... this just happened to be the recipe I was given by my buddy from eastern NC ... that’s kinda the cool thing about BBQ there’s not just one way to do any of it lol... I’d like to get your recipe if you’re willing to share it.

      Yeah, real ENC sauce wouldn’t have any brown sugar or honey. Been living there and eating bbq here all my life and never seen it or heard it until TH-cam videos of people not from here add it.

      My family in eastern NC use Apple cider vinegar, stick of butter, and a small amount of red pepper seeds. Bring to a boil and take off the stove.

    My recipe is similar: 2 C Cider vinegar, 1 C Red Wine Vinegar, 1/2 C Chili Sauce, 1/2 C Brown Sugar, 1 Tbs Sriracha, 1 tsp Black pepper, and 1 tsp Red pepper flakes.

      Big Lew BBQ you’d of course have to add way more hot sauce and pepper flakes! It’s pretty dang good as is but I’m gonna keep messing with it and see what I come up with. Gonna replace the brown sugar with honey next time so my wife can have it.

      Smokin Joe’s BBQ thanks My friend... I’ve cut back a bit on the sugar in the last few batches, as I get used to the vinegar flavor.... but it is killer both ways! Give it a try, I also added more red pepper flakes...

    Damn bro. I haven't seen a measuring cup like that since I was a teenager. Mom had one and I always liked it. I don't know what happened to it but I wish I still had it.

      What's really cool is that both Lexington, NC and Lexington, SC have great sauces.

      Smoking TarHeel That is true lol. SC has different sauces too more west they use a Lexington style sauce as well. I love all of them including the Kansas style brown sugar molasses style.

      Take It Outside oh this stuff is amazing!!! I’m gonna try the next batch using honey in place of the sugar... trying to stay away from processed sugar... but this is so dang good! Has a great tang and a tiny bit of zing.... makes me feel alive when I use it! Lol

    Great stuff and it is life changing. Vinegar and pork are a match made in Carolina heaven. I've served it to several of my friends who hate vinegar and they loved it. Spot on brother. There are many variations and many are good. God Bless. Keep on keeping on Onion.

    Best bbq in the world!! Lol! A little on the sweet side, but there are lots of variants to eastern NC sauce. You ought to try Lexington style sauce. It similar, but with a tomato base.

      RaleighSmoke yeah I’ve been looking up recipes for Eastern Carolina sauce and there are a lot of variants indeed.... I’m gonna keep reducing the sugar with each batch might try replacing the brown sugar with honey next so my wife can use it,

      I mop the ribs as they are cooking and add it after they are done!

    New to smoking so this might be a dumb question. Do you baste with it while smoking or add it afterwards, or both? It sounds fantastic though! Thanks so much for sharing!

      Chad Davis I add it afterwards, on a Pork Butt you want a good bark so you don’t really baste a Pork Butt when it’s cooking... rub with spices and let the smoke do it’s thing

      Onion's Smoke Shack BBQ - it’s actually pretty good. In the east you’ll mostly find mayonnaise based slaw, but in the west, what we call “Lexington Style”, you’ll find slaw that’s ketchup based. I’m personally not a fan of the red slaw, but my wife loves it.

      When they use vinegar they use sugar to balance the tartness. From the Carolinas North and South and I love Northeastern Bbq in South Carolina all the way down to Hemmingway. North Carolina I love BbQ from Parker's in Wilson NC the best slaw and BBQ
