  • Here is another great BBQ Sauce recipe from my good friend Bill West of Barbecue Tricks fame. Once again I relied on his BBQ Blueprint Cookbook for the recipe and I think I got it done right. This North Carolina Vinegar Sauce pairs with Pulled Pork fabulously as last night dinner complements from the family can attest too.

    Bill: Please provide the list of ingredients in your youtube notes so we don't have to work so hard.
    North-Carolina-inspired BBQ sauce:
    1 cup apple cider vinegar
    1/2 cup ketchup
    1 Tablespoon crushed red pepper
    1/2 teaspoon black pepper
    1/2 teaspoon kosher salt
    1/2 teaspoon ground mustard
    1/2 teaspoon celery seeds
    1 teaspoon molasses
    1 teaspoon brown sugar
    1 teaspoon Worcestershire sauce

    Made this recipe quite a few times already. Its so versitile and adds a ton of flavor. Great for pulled pork, rotisserie chicken and ribs... lip smacking sweet heat with a zing!

    Just saw someone else post this in the comments, but this is the list of ingredients since this youtuber didn't include this in the description...
    - 1 Cup Apple Cider Vinegar
    - ½ Cup Ketchup
    - 1 Tbsp Crushed Red Pepper
    - ½ Tsp Black Pepper
    - 1 Tsp Kosher Salt
    - ½ Tsp Ground Mustard
    - ½ Tsp Celery Seed

    I used a recipe online and it was way too vinegary for my taste. I did 2 cups vinegar, 2 cups ketchup, a fourth a cup of water to dilute, 2 tbs mustard, and 1 tsp red pepper flakes. I didn't measure the salt, pepper, or brown sugar. I just added it to my liking. Great video!

    Great video. Here in NC we break it down even farther. Ketchup and molasses makes it western NC style. Nothing but vinegar, eastern NC style. People have been killed over this argument.

      Yep, only vinegar, salt, brown sugar and red pepper flakes in mine here in eastern NC. It’s a little different the next county over. Lol

    Been searching TH-cam for a good vinegar based sauce. This one seems to have the most complex flavor profile (based on ingredients). Will try ASAP.

    An important thing to point out is that there is no such thing as "Carolina" barbecue sauce. There are multiple regions, and sauce styles, in both NC & SC. "Carolina" style can mean thin vinegar & pepper, vinegar & pepper with tomato (yet still thin), mustard, or thick & sweet tomato sauce.
    What you made here is known as Piedmont or Lexington sauce in NC. Most Easterners call it "western" sauce (although there is a sauce style further west in the mountains). In SC it is called light-tomato vinegar sauce.

    UK here. Worcestershire sauce. Pronounced: wuss-ster-sheer or if you're a true Brit, drop the "shire" and just say "wusster" sauce. Great video too mate. Thanks!!

    definitely a carolina thang.... if you're looking to "rehydrate" some pulled pork after reheating this sauce works great with a bit of orange juice.

    Texas guy here stumbling off the beef-beaten path to explore the world of pork and I was hoping to find the right sauce for a pork shoulder. This sauce was superb! Not too much molasses, perfect amount of heat, sweetness and vinegar. I disagree with some of the commenters here. The ketchup was key and gave it just the right amount of thickness. Everything about this sauce is perfect. I may even do a slight variant of this for brisket.

    This sauce is OFF the CHAIN. Goes amazing with pork. I do recommend you allow it to cool in the fridge for at least a day and come together.

    Pull Pork I'd something that arrived after the Yankee Invasion. NC BBQ traditionally is CHOPPED BBQ. The vinegar Cause is much more simple than you relate. NO KETCHUP east of the North South line from Chapel Hill to SC brder. You need to eat some BBQ in Aden NC or Greenville,

      Yea, I have been slaughtering "Worcestershire" all my life. I still get people trying to correct me too :-) The pans, previously called "Man Pans" are now called "Lloyd Pans" and you can find them here: lloydpanskitchenware.com Perhaps they ship overseas?

    Have not made this yet but I'm familiar with the flavor profile. As much as I like molass , the plumb sauce is better. I'm a Texan . I would add chili powder and Tabasco smoked chipotle sauce to taste and maybe a tad more sugar. To each his own.

    I'm from Boston Ma. West of us in the city of Worcester. We pronounce it "Wistah". We pronounce Worcestershire Sauce like this - "WistahSheer Sauce".

    In eastern N.C. any local judge will give you 10 to 20 years if you add catsup to your BBQ sauce!

      @@CookingOutdoors ,My post was meant as a joke. Eastern N.C. and western N.C. have had a long going battle as to which had the best BBQ sauce. Eastern N.C. sauce is basically the same as the western sauce with the exception of the catsup. I personally like it both ways. I am in the eastern part of the state and it is hard to find a sauce with catsup here.

    9 ingredients. That's about five or six too many, IMO. Just use vinegar, pepper flakes, salt, sugar. BBQ isn't complicated.

    This is not North Carolina Vinegar Sauce. This is simply a version of what is known as Western or Central North Carolina style BBQ sauce. Eastern NC style BBQ sauce is entirely different and features only vinegar, salt and red pepper flakes, maybe black pepper too. So this video is misleading.

      Correct,, there are a few more ingredients but to each their own! Adding catsup or any tomato based products to it makes it not!
      True NC style is thin as water and full of zesty, spicy flavor!

    This is misleading you can't label this a Carolina sauce, since I am from both North Carolina and South Carolina the sauce they use for barbecue is different. This is someone's own recipe who is passing it off as Carolina BBQ Sauce.

      Not misleading .... did I not say this recipe is from Bill West? Did you not hear me say his is from and lives in South Carolina??????? This is his recipe and I followed it exactly. This recipe varies by zip code and I don't think anyone has the original. Enjoy this for what it is, a damn delicious BBQ sauce.

    As soon as you added ketchup you ruined it. This is not Carolina style, but I'm sure it's a close second. :)

    In eastern North Carolina no molasses, not celery seasoning, and no ketchup. Just vinegar, salt, pepper, brown sugar, red pepper flakes, and texas pete. Makes it perfect. Add a little water to dilute the vinegar just a bit. :)

    Vinegar-based sauces need to sit a few days , using the same day will not give you the CAROLINA flavor

    The pronounceation doesn't matter.
    But it is pronounced
    Worster shire
    wors-ter shire
    Shire like where hobbits live.
    Only reason I know that is i watched a small documentary on how its made in the town of Worcester (wors-ter)
