- These festival-style smoked turkey legs are what everyone SHOULD be having for Thanksgiving rather than a whole bird! Who WOULDN'T want one of these instead of that crusty dusty dried out turkey breast??!!!
Here's the recipe for the curing brine:
2 cups cold water
2 tablespoons Diamond Crystal Kosher Salt
1 teaspoon pink curing salt (Prague Powder #1)
1/3 cup molasses
PLUS whatever else you might wanna personalize this brine with....
Brine the legs for no more than 24 hours and smoke them at 300F until you reach your own desired internal temperature.... I went with 160°F....
Enjoy!

Me too
I made this today, turned out AMAZING!! Thank you!!
Such a pro tip to vacuum seal them- thank you I’m so excited to make them!
Skin looks great!
Can this be done on a whole turkey?
Oh, they are fresh, I get it! I buy them smoked!!
What other meats can I use this brine for?
I don't think I would use this brine for anything but poultry, and in most cases I would NOT include the pink curing salt for anything other than this, but you definitely can try it.
Do you also brine a ham??? I cook them without brine and they come out just fine!
No rub on the outside?! 🤦🏾♂️
I was thinking the same thing
No need for rub the brine gives it all the seasoning it needs. If you need seasoning I’d do a no sodium rub or a no sodium poultry rub.
Exactly what I was looking for !

What the h*** is the point of the brain? Everyone says you have to do that. I mean don't you let him throw out until you're? Seeing him on there and grill him tor smoke them or what not
