    Great recipe video!
    When it comes to the clumping of rubs, that would be sure to the sugar content in the rub and the moisture in the air. And yep, in Texas (especially Houston, my hometown) that humidity is high and does directly affect the sugar in the bottle. All you’d have to do is store the rub in a dry, cool place and when you use it, shake it before use or use the handle of a spoon or butter knife to break it up.

      What internal temperature are you cooking them to? If they aren't cooked to at least 180°, expect them to be tough

    Do you give them a rinse to remove the excess salt from dry brining then pat dry? Or do you leave the salt on. In my experience when I’ve dry brined Turkey, I left the salt on and it was way too salty.
    Or do you just go lighter on the salt when dry brining, because from what I’ve read dry brining always uses way more salt to cure than what is reasonable for seasoning.

      I rinse the excess salt off. Then I add a sweet base seasoning to counteract the salt.

      Dry brine is just salting your meat and let it sit in the fridge overnight. Dont rinse off when your ready to cook em. Just season em up without salt and cook em
