There one gripe for me with Vietnamese noodle in the US. After all the normalization and trade, they still haven’t been able to put proper Pho noodle into a bowl of Pho. In many places we still have to settle for the thin, insubstantial pho noodle.
Portland has GREAT Asian restaurants and stores. Zien Hong. Fubon. Rose VL. Pho Oregon. I live in N.E. Portland and feel blessed they are here. Of course I am addicted to their soups. All of Portland has many excellent restaurants as well. Portland has hundreds of talented and very special people cooking here. Come try them. But don't stay.😄

I'm less than half their age, been cooking for half my own age now. I wake at 4:am to get to work (on a military base) by 4:45 am, and I cook way more from scratch than just two broths every single day.. It's not hard if you know what you're doing, and I'm sure it's a piece of cake for those two who have been doing it forever. I bet their soups are delicious.
