1 tbsp Butter
1 cup Broccoli Florets
½ cup Yellow Zucchini (sliced)
1 Carrot (chopped)
½ Red Capsicum (chopped)
1 cup Broccoli Florets
1 Broccoli Stalk (chopped)
½ cup Basil Leaves
1 tbsp Coriander Leaves (chopped)
10-12 Garlic Cloves (peeled)
2 Walnuts
1 tsp Chilli Flakes
1 tsp Oregano
Black Pepper Powder (as per taste)
½ tsp Sugar
1 tsp Butter
¼ cup Cream
Pasta Water (as required)
Salt (as per taste)
50 gms Processed Cheese

Love this version of Broccoli pesto sauce! No need of extra virgin olive oil.
pro tip if you blanch the broccoli and zucchini and blend it with a little olive oil that can be your cream this way you dont have to add cream. also add more pasta water to better emulsify. otherwise great and simple recipe. love it

Do not add oil to water for pasta unless it's for a pasta salad with oil-based dressing or an Aioli, which is again oil-based. The sauce will never stick right to the pasta and will also taste greasy.
for all those watching ... DON'T put oil in the pasta water ... bad idea ... I like your recipes, but don't mislead others
But why? At least you should write with the explanation!
you don't want to coat the pasta with oil ... the sauce will adhere to the pasta better without oil ... which is what you want ...
I know of no Italian that puts oil in the water, including all my relatives ... plus the ratio of oil to water is a waste, it sits on top of the water and coats the pasta as you strain ... why bother ... cheers
even Gordon Ramsey puts oil in the water .he of all chefs should know better, not sure where that idea started
some complain their pasta sticks together ... their not using enough water, or use a better quality pasta ...
fresh is best, but a good quality slow dried pasta is better as well, always slow dried, and it should be whitish never yellow ... yellow pasta is a low quality product ... spend a few pennies more ... white is right ... I hope this helps ....
