      Futomaki would be good for you - no fish, just egg and veggies and shiitake mushrooms all in a roll with seaweed wrapping.

    This looks amazing. Just a note, vegans can't use standard tsuyu sauce because it is made with bonito. I'm sure there's a vegan version of it though.

    Wow I’m surprised how much it looks like fish! I bet if you marinated the mushrooms with some soy and mirin and nori flakes it would give it an “ocean” flavor too

      @Genevieve A, yes Nori seaweed adds delicious savory ocean flavor, but konbu seaweed give you savory ocean fish flavor so by combining both seaweed it will give beautiful savory flavor ☺️

      Probably something I would do, and granted I haven't watched the full video yet, is maybe dehydrate the stalks, and then some of them in a pure seaweed and sake or mirin blend a broth, making sure it's concentrated in flavor, and then simmer it like that. Either that, or when it's still raw, maybe blended up with some coconut oil? Or actually maybe after that process I just mentioned, either dehydrated again and then blend it up and then add a bit of water along with some coconut oil, more specifically refined coconut oil? Either this or maybe just blend it as is after cooking in the broth with coconut oil and then shape it into the shapes you want and then put on your sushi.

    Heads up anyone who wants to use Tsuyu sauce, it's got dashi in it, and dashi is anchovy and kelp broth flavored with smoked bonito... so this seasoning has fish, it is non vegetarian.

      Yeah. I think some black vinegar or a dark soy sauce would make a good replacement for tsuyu. I love Emmy, but it is a bit of a poetic shame that after all that mushroom effort, it just got dipped in fish anyway lol.

      Dashi is usually made with soy sauce, mirin, sake, kombu and katsuboshi (bonito), but you can omit the katsuoboshi and that is called kombu dashi, and is vegetarian. Very easy to mix yourself, and you can then make this recipe and it will be vegetarian.

    As a vegan, I really appreciate how you are willing to let something be it’s own thing, not pretending it tastes like fish or chicken or whatever but instead making something reminiscent and delicious and being able to admit both are true.

      Tomm is correct. Tsuyu has bonito flakes (dried fish) in it. Maybe try it with soy sauce and mirin instead.

      And as a non-vegan, i enjoy vegan dishes way more when they're not imitating non- vegan food. I think a lot of what turns people off from the vegan diet is that they're under the impression that the food they're limited to is just imitation meat

      @@xalener I watched a 30 minute video the other day of a woman trying make a vegan egg that looked real. It was so ridiculous and pumped full of chemicals.. it just didn't make sense to me.
      Soo... don't eat organic un fertilized eggs... which hurts no animals.... or spend hours trying to make one and that only "kind of" tastes like eggs using chemicals..

You decide to be vegan/vegetarian whatever, and then spend so much energy making and eating things that look like or taste like the thing they are trying to avoid. (Also, they neither look like or taste like the real thing. Like diet cheese.) A meat eater would never try to get a pork chop to look or taste like eggplant. They just enjoy the dang pork chop!

    Emmy rocks!! Once I ordered an ice cream that tasted just like maple syrup- but it wasn’t it was a type of mushroom that has a maple flavor. Fungi is fun!!!!! I want Emmy to make hamburger helper sushi, I made it a while ago on my channel and know she will get a kick out of it!!!!

      I got ahold of some Candy Cap Candy once. Lofty Pursuits in Tallahassee fl does some really fun stuff with candy. It wasn't mushroomy at all, but was pleases fly sweet & maple-y 😁

      I watched a show on FN about crazy flavors of ice cream.
      The host got some ice cream of a specific flavor and handed samples to people.
      They all loved the sweet, creamy ice cream but none could guess the correct ingredient that was added.
      Imagine their shock when the secret ingredient was roasted garlic.
      Roasted garlic is nothing like fresh. It's creamy, silky and sweet.
      I haven't tried any yet. So, I'll reserve my judgment until I taste it.

    Loved this Emmy!! I’ve been vegetarian for a month an a half now and it’s been a very positive change for me as it’s drastically improved my triathlon performance - definitely interested in more vegetarian and vegan recipes!

      Be careful, because tsuyu sauce contains bonito flakes (fish). If you're not super familiar with Japanese cooking, just know that the vast majority of Japanese sauces contain bonito flakes or other types of fish. You can make them homemade without the fish, though.

    Aah I'm going to try this this week, I really tend to dislike homemade sushi because I cannot get quality fish but I love eryngii mushroom and tsuyu so this sounds and looks like such a good 1 person meal with some miso soup

    My favorite way to eat sushi rice is, plain hot sushi rice in a bowl, cut up avocado, a few globs of cream cheese, torn up seaweed, and a splash of soy sauce, mix it all together and the heat from the rice will really soften the cream cheese, so it spreads more, it is 🔥

    I love seafood. I love mushrooms.
    I made a fungus satay sandwich yesterday using a Portobello cap.
    1 cap made 3 sandwiches!
    I used honey wheat sandwich thins.
    Roasted red pepper mayo.
    Marinated red onions.
    Crunchy peanut butter based satay sauce.
    Sweet and sour sauce.
    Butter lettuce.
    Tomato.
    Smoked provolone.
    Olive oil sauteed thinly sliced Portobello mushroom cap.
    I make it with chicken as well.
    Mushrooms are also a good source of Vitamin D.

    These mushrooms rule. I like to slice them and sauté them with butter and a little tarragon and it’s very reminiscent of eating a white fish. This looks delicious!

    Always interesting to see what people come up in times of desperation, whether it’s mild (don’t feel like going to the store) or severe (literally NO food).
    Would you please do more retro recipes? My grandma used to make this “Old English Crab Melt” thing… Old English jarred cheese spread, imitation crab meat, old bay, and melted butter spread over an English muffin, toasted and cut into squares. I know you’re drooling. 😆 And when I was little, she’d save the tiny glass jars and those became the cups my brother and I drank from. BPA free since before it was cool. 👏🏽

    I do not like what I call fleshy fish; tuna, salmon, tilapia, etc. I love shellfish though. The only sushi I ever eat has imitation crab or tempura shrimp. This is a really cool substitute. I'd love to try it someday.

    Hello from Iceland! Love your videos! Would you consider trying and making some Icelandic dishes? So many amazing and delicious dishes. An easy place to start is plokkfiskur. It's few ingredients, easy to make and absolutely delicious!! It's a traditional and a favorite comfort food here. Keep up the videos. Hope you can come and see Iceland in person someday!

      @@nectarina3891 Do you remember where you had it? Fjöruborðið is a pretty popular place here! It makes my favorite Humarsúpa! Its in Stokkseyri which is about an hour away from Reykjavík. Glad you got to experience Iceland!

    King oyster mushrooms are delicious - an Austrian brand uses them to make vegetarian bratwurst that is amazing and incredibly close to the real thing (Herrman fleischlos)

    'Nigiri' comes from the verb 'nigi-ru' or 'nigiri-masu' that means to clasp, to grasp, or to grip, and it refers to the way sushi chefs grasp the rice and model it with their fingers in order to give it that shape :)

    these look awesome! I can't stand the texture of raw fish, so most nigiri is off-limits for me, but mushrooms I have no problem with! might have to give it a try :)

    Try puffed pork skin… boil skin, dehydrate then deep fry and cover with different powers (beetroot, vinegar etc) it’s awesome

    I shred king oysters, season and bake low and slow as a substitute for pulled chicken or pork. I made an amazing "chicken" paprikash last weekend and have made pulled "pork" barbecue sandwiches with coleslaw.

      Yes. Wasabi face is an _actual_ thing (the surprise look and the feeling of 'whoosh' as it goes up your sinuses) and I live for it on my nigiri.

    I love sushi - literally cannot get enough of it. I'm a veggie too - and this looks great. We have lots of King Oyster mushrooms here - they're so meaty and tasty. I will try this. Interesting substitute for soy there. I'll check that out.
    Edit: Oh Tsuyu has bonito flakes in it. Never mind - Mirin and Soy it is then.

      As it turns out, that could be quite the solution. We only eat meat as much as we do due to the advertising promotion from meat producers. We don't need to eat meat three times a day, all year. Your way would solve a lot of problems.

    This is a very great idea. I am a huge fan of trompe-l'oeil cuisine. Maybe do a brief marinade of boiled bonito flake broth that has been cooled down for the mushrooms to give them even more of a fish flavor before searing them?

    If you want to actually get the texture and flavor of sashimi, I recommend to simmer l your mushrooms in rich kombu broth with a bit of liquorice powder, soy sauce and sugar or sweetener for a few hrs or preslice and first marinate in strong kombu and soy based marinade, for extra fishiness add hemp or flax oil. Then do the same - sear and serve.

    I’ve seen some Aburi salmon where they brush sauce on, drizzle kewpie Mayo on top, and then they torch it
    So I’m just imagining, slather some of that sauce (or a vegan version of that), drizzle vegan kewpie Mayo on top, and then torch it!
    I reckon it would taste soooo good
