    These look so delicious! If I were to make a matcha version, how much powder should I use and do I lessen the amount of flour? Or can I add matcha powder to the melted butter instead?

      You can but just reduce the flour by the amount of matcha you add!

      I just scoop it and the batter spreads as it bakes but you can spread it in advance if you'd like!

    Why is butter added as a last step? Usually butter is added so much earlier

      good question! I think it's to create the density of a butter cake but with the texture of a sponge. the air in madeleines is created by beating the eggs and adding butter straight to it will deflate it much more. this is however from my own speculation as I haven't seen anyone else explicitly explain it, but I did find a difference in the batter when I experimented with switching the order of when I add the butter

      @@JasmaFusionCuisine Usually it's about "fat first == less gluten", meaning less spongy. So what you said makes sense. I just had a feeling those cookies are more crumbly, less spongy. But just a feeling, I've never had them
