I’ve been eating green beans almost every day and haven’t gotten tired of them. Is the red paste Very spicy? I ask because I don’t have a very high tolerance for spicy. 🌶️
The original version of this dish uses yardlong beans, so those will work too! How spicy the doubanjiang is depends on the brand, but it is moderately spicy. You could get around this in a few ways. One way would be to cut back on the amount of doubanjiang and then use soy sauce or salt to season it. Another possibility is to eliminate the doubanjiang altogether and thin out some miso with a little water or sake and use that instead.

I forgot: I see you didn't add salt nor soy sauce. Is it because douban... (what was the name of that chilly paste) the chilly paste contains salt ?
Hahha yea, I didn't want to call it out too much because it's delicious whether you're vegan or not.
Doubanjiang is a very salty condiment (kinda like a spicy miso), so there is no need to add any additional salt.
