This turned out seriously good - the method mattered. I did not have all those sauces, so I just put a couple dry red chillies along with the garlic and ginger and onions. Bit oily, but just amazing taste. I felt like I was in a rustic street side Chinese restaurant.

Yes he did add oyster sauce used corn starch to make a slurry and I didn't quite understand the kind of wine he said but didn't think he said rice wine vinegar...I may be wrong on the wine though. Recipe sounds and looks amazing.

I guessed that it was fish sauce, but now I don't know if that was correct. It seemed darker than Mirin, but lighter than soy sauce. I did add soy sauce at the end, although it wasn't mentioned in the recipe.

@@deshladkoo328 it was a little red pepper paste, like Sriracha Sauce for heat and then the thick brown paste was Hoisin Sauce which is a very common staple in Chinese cooking and readily available in most grocery stores.

@@marthaotero6374 i just used an italian fresh red chilli (peperoncino) , you can also use a korean chilli paste "Gochu Jang"

At 4:07 he puts in hoisin sauce. I never heard him say anything about oyster sauce, as someone mentioned in the comments.
