My grand mother, who is deceased now, cooked coconut pineapple cakes like this and she taught me this way ,the old white cooked frosting, not cream cheese frosting. Thank. You for the Memory!!!! ❤️

I made 2 of these one with and one without the pineapple per customer, and I will never do it without pineapple or some type of filling in the middle...I had no problem with the cake with the pineapple filling, the icing almost took me out, had to redo it several times and ran out because she didn't want pineapple filling so I added it between the layers and I didn't have enough, she said the cake was delicious, I will have to make this again for her but now she wants it with the filling, I told her she could get it with lemon or strawberry or something like that... because she didn't want pineapple, I really couldn't figure out what to do and there wasn't enough icing in between, I learned a lot she is reordering this for Easter she said she loved it! Thanks for responding and all of your help! I always do a cream cheese icing for a plain layered coconut cake, I will get it next time now that I know 😊❤

Ok so I'm a baker and I'm a bit confused with your measurements. You used a liquid measuring cup for flour is that what you measured the flour in or you transferred it there? I just want to do it the way you did so my cake comes out correctly. Other then that it's a beautiful cake.
