    Rebecca, this is so wonderful! The time and work you've put into this comparison is astounding and I am SO grateful! I have a painful admission--I'm an admin at IndriVanilla, I wrangle vanilla beans for a living (order fulfillment), and I have access to a LOT of vanilla beans, and *gasp* *shock* *clutch the heart* I have never made vanilla paste. I know, I know, I hang my head in shame. But this comparison has really opened my eyes and encouraged me to take the plunge! This contribution is so appreciated!

    I use the Alex Green paste in EVERYTHING!!! Frosting- coffee- you name it! It’s my favorite.

      I really love it as well! Since I made this video, Alex Green came out with a simplified updated version that is on par with the three ingredient recipe! I made a video about that as well. I can highly recommend it!

    Hi! I’m in the Indri group & came here as a result of seeing you there! 😊 I am still waiting for my first extracts & haven’t ventured into making paste yet…my next order! This video and the others showing how you made each are all so fantastic for helping me be prepared for what each entails & which I’ll want to try first! Thank you so much for sharing!     It’s the agave in the 3rd one. It’s adding sweetness. Where most recipes will have sugar already included

    I’m in the Facebook vanilla co-op group as well, and I’ve been wanting to try vanilla paste. This video is really helpful in deciding which recipe to make! I really like the idea of being able to make both paste and extract with the same beans, so I’m thinking the Whitney Olsen may be the recipe for me! I’ll check out your video of that recipe. Now to go order more vanilla beans…😆

    My very first attempt at vanilla anything was the Whitney Olsen. I loved it so much more than the high end one that I've bought for years! And it's only 4 days old! Hopefully I can leave the jar shut for the next 4 weeks to get the full bloom. LOL! And with the pods I started an extract, sugar, turbinado sugar and salt! I will try the other two pastes eventually, but WO for the win! Thanks so much for your comparison! Your videos have helped me so much!

      Woo hoo!!! That’s fantastic! I actually didn’t find that the WO paste had much (if any) taste change. I’m pretty sure that it tastes the same now as it did the day I made it.

    This was sooo interesting!!!! Thank you Rebecca! I found myself sucked in, I wanted the results! Looks like that's the recipe I'll be trying when I finally buy my beans (I still haven't bought them yet 🤦‍♀️)

    I love the Witney! That's the only one I make. I love caviar specks and using the beans in my mother jar. It does take forever though!

    I try the beans you buy from IndriVanilla. They smell like vanilla. I’m not buying vanilla beans from Amazon ever again. I bought several different ones trying to fine good ones. Didn’t have any luck through Amazon.
    I got my beans from IndriVanilla and made vanilla bean paste. I did a few jars in a water bath to sealed them. Is that good or bad?.
    Thank you those were the best beans I have ever gotten from all the beans I bought from Amazon and one other place I tried. Going to order some more soon😀😀

      I’m glad you liked the beans! People often wonder which ones are the best and I say, if you order from Indri, you can’t go wrong. Everything they sell is amazing!
      As far as canning goes, I can’t speak to that. I have jars of paste, that I didn’t can sitting in my pantry from two years ago that are still good! I may have made more than needed! 🤣

    I use a light flavored acacia honey and beans. Cut off bean tips and blend all together in my Vitamix. It’s so good. 2 ingredients only! The best!

      @@esericae I use fresh beans. I cut them in pieces and put in vitamix(any blender will do) and just blend. I use about 12 beans to one cup of honey. It is very thick. I have some I need to add more honey to as it’s gotten too thick. It will last forever as honey does not go bad.

      You can store in your pantry. They are pretty shelf stable and I can only tell you that I’ve had several for over a year without any issues. If anything they are better than ever.

    Have you tried reusing vanilla beans that were used to make extract and making the Alex Green Recipe with them?

    Ok thank you was just wondering. By giving them a water bath do you think that would hurt the paste?.
    Might have asked you that already, but can’t remember. Anyways I water bath 4 jars and lift the other 4 alone. So I will check them in about weeks and see??.
    I wish I had ran across you before buying and wasting all that money on Amazon.

    How long should those beans keep being vacuum sealed?. Just curious.

      I’m sure no harm was done by canning your paste!
      About your vacuum sealed beans though…they will mold, at the very least store them in a little alcohol. You want the beans to be covered. Indri wipes down every bean with a little alcohol, but that will only protest them for a short while. I have a mother jar, so if I’m not prepared to start a new batch of vanilla or make paste, I toss my “extra” beans in there.

      Yes I have a mother jar I started. I tried the 3 ingredient recipe. I found another recipe that called for sugar, corn syrup, water, 2 ounces vanilla beans and 2/3 alcohol. I found a vanilla vodka that I used in it.
      I was reading somewhere after the fact that a water bath may of evaporate the alcohol?.
      Thank you for replying back to me. I’m all new to this vanilla thing. I got scared maybe, I ruined it after spending all that money on finally getting some good beans.
      But I guess time will tell?. Said to let it set 8 weeks or more.
      So you think the alcohol was evaporated after a water bath?. Thank you for replying back and I will not keep bothering you. I’m sure you’re busy.

    Major difference between the seeds and the bean itself. Your right in that the bean paste is chewy b/c the bean is tough. Pulverizing the bean is best for baking only and not for coffee, smoothies etc. (in my opinion) bean powder doesn't dissolve. The seeds on the other hand is smooth and no chewing at all. I'm here for team W. Olsen. BTW Thank you for putting all of this together. Your work makes it easier for us to better understand the process and help avoid pitfalls...expensive pitfalls.

      It’s not the colour that would bother me in the ice cream, it’s the fibrous chunks. You don’t notice them in cookies but in my opinion it would take away from the smooth silliness of ice cream.

    U ACT AS IF U HAVE THE $$$ MONEY BUT WE DON'T.. LIKE I CAN AFFORD IT BUT YOU PROBABLY CAN'T.. I TOOK GREAT OFFENSE TO THAT. HONEY IF I HAD MONEY ISSUES I SURE WOYLDNT B LOOKING UP HOW TO MAKE.. I MAKE FOR GIFTS AND PURE ENJOYMENT!!! I THINK I KNOW HOW MUCH BEANS & VODKA IS.. AS FOR THE REST OF THE INGREDIENTS HELL I WOULDNT EVEN PUT A PRICE WHOOO CARES.       I’m sorry that I offended you! I’m not sure what I said in this video, but I was probably complaining about the price of vodka. I’m a non drinker and am always shocked at the price of alcohol when I buy it for making extracts.
