Put half the sugar in, add all your beans, then scrub your vanilla-y fingers with the sugar. Then you get the extra vanilla off your hands and into the sugar.
Simple syrup, agave syrup or glucose can generally be used instead of corn syrup, or any other kind of invert sugar (it's used to avoid crystallization of sugar). The consistency may differ.

Maybe you’re not using enough vanilla beans. The typical extract recipe calls for one ounce of vanilla beans to eight ounces of vodka. Mine has been sitting for two years and it’s a very dark brown.

Make sure the alcohol is at least 80 proof or higher otherwise it won't extract the oils from the beans.
All of mine turn out very dark. You are not using correct ratios plus cut bean lengthwise and then into thirds
