    my mom has inherited a vanilla extract from my grandma that was a mixture a bourbon and vodka and vanilla beans and husks that's been going for 60 years with no extract added. needless to say... incredible.

      60 years?!? Yes!! I started so many 25 oz jars as Christmas gifts! I can’t wait. Letting them sit for 12 months before I start using mine and gifting the others. I used vodka for 2 and the rest bourbon. I hope everyone likes it 😂

    Interesting facts about vanilla:
    -They are orchids;
    -Vanilla orchids are part terrestrial and part epiphytic;
    -The plant is native to Mexico and Mexico is the birthplace of all vanilla and produces arguably the highest quality vanilla;
    -Vanilla typically only blooms for one day;
    -In areas where natural pollinators do not exist, the flowers are hand pollinated (it is pollinated in the wild by a native bee - NOT European honeybees);
    -It takes roughly 7 to 9 months for a vanilla pod to mature and ripen after it is pollinated;
    -Vanilla production does not require deforestation in the same way coffee plantations do; however, deforestation may occur from cheaper plantation operations.

      Not ALL vanilla is native to Mexico. Here in Brazil we have many native species, including both the "standard" variety being discussed in this video (V. planifolia), and the banana-sized cerrado vanilla (baunilha do cerrado, V. edwalli). The latter is still only collected wild by traditional communities.

      It drives me crazy how a wild orchid that's native to only a few exotic tropical lands, which only blooms for one day and requires incredible work to process into a delicious flavor enhancing spice has become synonymous (in English) with "boring, plain, and ordinary". If someone talked about having a "vanilla love life", that seems like it should be exiting and rare! Edit: Oops, she says that at 4:25

      It's kind of the same concept behind Listo-bums ...Only generally they can't afford alcohol or have been banned from the stores so they chug Listerine to get hammered (though now days it doesn't work so well as they've gone alcohol free)

      IIRC watching a small commercial vanilla shop, they cut the pods down fairly small (almost shredded). Makes sense to increase the surface area to infuse.
      I've gotten good prices/quality on whole vanilla pods via ebay.

      I got alchohol free vanilla extract from that same company! Heilala. I use it for my baby’s bottles (suggested by her pediatrician). She prefers fresh breast milk over the thawed.

    I was so excited to see this! I actually studied vanilla in Madagascar and got to work with vanilla farmers. An amazing and fascinating ingredient.

      Oh thats really cool! I was in a study abroad program but im not sure how to get in touch with people there. A local hotel may be able to find you a guide who can arrange a visit for you. I would recommend speaking some French and trying to learn some Malagasy as well.

    My mom is growing vanilla in Hawaii. She’s adorably obsessed with it and is now working on a cacao plantation because she wants to grow the vanilla orchids on the cacao trees. 😭🥰 We’re still working out the curing process, it’s very labor intensive.

    I love that Claire is so passionate about vanilla! I've never understood why one of the most layered, nuanced, exotic flavors available is so often dismissed as "boring". This was I think exactly the motivation I needed to start my own extract finally.

Getting a terminal degree in Tanzania is NOT the same as getting a PhD from a top tier, R1 university in the US where you then do research for your thesis in another country. It just isn't.

      @@Galactiac Of course, that makes sense. But as soon as you will want to use vanilla seeds (sugar, frosting, etc.), you will be left with the pods and then it makes sense to make a homemade extract instead of throwing them out :)

    When I studied abroad in Tanzania, I got to visit a vanilla farm on the slopes of Kilimanjaro. It was really incredible to see it growing and meet the farmer.

    I used to work at a patisserie where we would put the empty vanilla pods in a little salt container and use it in some recipes (like you mentioned with the sugar), but also sprinkle it on cookies before baking them or on whipped cream on top of hot chocolate and it was sooooo good!!

    Thanks, Claire! Ever since I started to make my own vanilla extract, my baked goods are so much more intensely flavorful. So easy too! I let my beans steep in the vodka about 4 weeks before I scrap the seeds out into the liquor, then let it steep another 3-4 weeks before I use it.

    We were in the Cook Islands and had the opportunity to visit a family who grew vanilla beans. She graciously gave me a few to take home and it felt like she was handing over gold!

    Most store bought extract is single fold. To do single fold extract at home you would use 1 ounce of beans to 1 cup of alcohol of your choice (70-100 proof)
    You definitely can make more concentrated vanilla if you increase the ratio. So either double the beans or cut the alcohol by half to create double fold extract. This extract is good for recipes that are sensitive to liquid. Extraction typically takes around 12 months. (I currently have some Indonesian beans extracting that I started in December so my extract should be ready around the holidays this year and just received some Madagascan Bourbon cured beans that I may make paste with. I get them through a co-op with very affordable prices ☺️)
    You can dehydrate the pods for vanilla sugar so that it does not clump or alternatively grind them down to vanilla powder. Vanilla paste is also a great way to add vanilla flavor to recipes along with some sweetness.

    I made several small containers of extract in May 2020 and and I am beyond thankful for them now! It's an amazing gift to hand out to fellow bakers. I used a variety of beans but the Madagascar beans made the most potent smelling extract by far. I've been saving pods and making vanilla sugar too, it has become a must have ingredient for me.

    Ngl, I teared up when I heard the opening song. I was watching the SourDoughnuts trilogy yesterday and she mentioned that she'd been making her own vanilla extract @ home, and today I see this. What happened with bon appetit is and will always be terrible, but it allowed everyone to branch out to do exactly what they want to do, and I love it. I'm sure everyone's happier too.

    I love the “starter” deal you mentioned, I used that same tip for my asap bottle when I’m also going to be making a 3-5 extra jars, I will use one with the starter to use again ASAP while I’ll be storing/ curing/making my other bottles which will be processed and in the storing mode for up to 6-9 monthsc that’s exactly what I do in the process of making my fresh vanilla extracts and I love using clear liquors and I have recently started using rums and bourbons now recently and I can’t wait to have a rum bottle and a bourbon extracts coming within a few weeks

    I started making my own vanilla extract on 2018. I did a bulk buy with some friends. This video has inspired me to ask my friend if they want to do another buy since I've been using the same vanilla extract for almost 3 years and I need to refresh it!

      There was a recipe for homemade American cheese in Lucky Peach, David Chang’s old quarterly food magazine, where one of the ingredients was store-bought American cheese. It doesn’t seem to exist on the internet but I remember reading that and thinking it was hilarious.

      Seriously tho, the imitation stuff actually tastes bad. It ruined my batch of cookies because the imitation vanilla extract I bought tastes funny (almost like bubblegum). Some extract even tastes like fake candy bananas or cheap vanilla perfume.
      No shame if you like the taste, but it is so not vanilla. Better to add nothing.

    I love this video, i'd like to see more videos about how to prepare different homemade ingredients, or even how many different ways you can prepare a particular common ingredient which can be used in various recipies (I like to experiment with food and flavours, and knowing more preparation techniques allows me to improvise and play)

    Also, I've really enjoyed making orange peel and lemon peel sugars in much the same way you're making your vanilla sugar. Certainly worth looking up as it's an amazing way of introducing great flavor to many things by using something that is often discarded when extracting juice from lemons and oranges. I just peel the fruit first and add that to a jar of sugar.

    Loved this video. I made my own vanilla extract last August but I did mine a little different. I split the beans but left the seeds and put 5 beans in 8 oz jars with 8 oz of vodka and gave them out as Christmas gifts! I did a couple jars for myself and did one with vodka and one with bourbon and I've noticed that the bourbon one has taken longer to really get that vanilla scent whereas the vodka ones were pretty quick.

Asking or telling a viewer to like and subscribe to something they are willingly watching is not the the same as telling a person to change their diet, exercise, steal or murder, yet your statement says they are. Many people are lazy or forgetful, or maybe just on the fence about adding another channel to their list. There are plenty of times I move on to the next video and don't hit the like button. I'm sure there must be some creators who have seen an increase once they do ask or remind and it doesn't cost them anything to remind the viewers. Some youtube viewer are just quite simple minded, but you don't know anything about that, do you?

    I just wanted to say that I bought your cookbook and I've done 3-4 recipes from it, and it really is the most helpful, detailed cookbook I've ever owned. I love opening up a cookbook and knowing that I can trust every recipe in the book, rather than searching online for a recipe that may or may not be good.
    I also started my own bottle of (rum based) vanilla extract using your method, so I can do this but also have an extract that's different from the store-bought one.

    I stopped taking sugar in my coffee for my health a few years ago. But at Christmas I made some vanilla sugar out of some empty pods and I allow myself one cup of coffee with vanilla sugar every Saturday. I look forward to that cup of coffee all week.
