    Just here to say I REALLY appreciate your brief list of “vegan youtuber foods” that you don’t like. I can’t stand oatmeal and overnight oats, and I’m glad I’ve found a channel that’s not going to swear that a bowl of oats is going to taste just like a strawberry shortcake. 🤦‍♀️

      I looooooove overnight oats. If anyone ever wants to try them (only people who want them, not you OP, that’s okay), this is my recipe:
      1/2 cup oats
      1/2 cup full fat oat milk (or 1/2 cup unsweetened plain almond milk) usually I’ll add more oat milk since it’s thick - stir and see if it needs more
      1 tbsp chia seeds
      1 tbsp maple syrup
      Splash of salt (Unrelated, but I found that adding a splash of salt to my coffee completely got rid of the bitter taste!)
      I highly recommend using oat milk because it’s DELICIOUS.
      This is the base, then I add fruit the day of. Usually I add about 1/4 cup of frozen raspberries that I let thaw and peanut butter to taste (2 tbsp?). Or bananas and peanut butter. Or blueberries and peanut butter. I’m not a strawberry person. I hear chocolate and peanut butter tastes good too.
      Idk, they saved me. I used to never eat breakfast but it takes me literally 10 minutes to make 4 servings. I only use one measuring cup and one container for bulk! 1/4 cup.
      4 serving recipe:
      2 cups oats
      2 1/4 cups full fat oat milk OR 2 cups unsweetened plain almond milk
      1/4 chia seeds
      1/4 maple syrup
      See? Only need to use 1/4 cup. Makes it very convenient.
      I hate regular oatmeal though, I can only stand overnight oats. And to each their own, I just wanted to share ;-;
      Edit: got rid of the butter -> got rid of the bitter
      Bruh, even as I type it right now it keeps autocorrecting to butter! Wth.

      @@user-sf9gs2pg1b Oh my god, do I hate oat milk (but love oatmeal 🤣). It's on my list of vegan TH-camr favourites that I can't stand. I'd rather go hungry or thirsty than have some oat milk in my mouth. Chia seeds, too - vile, slimy, disgusting bits from hell.

    Nisha, these recipes are so helpful. I love that you can mix and match them. Tonight, I made the garlicky kale, with crispy tofu, and the tahini sauce. It was absolutely delicious! My husband doesn’t even like kale. But he cleaned his plate. Thank you for making eating healthy vegan easy!

    Love all the recipes! To make it easier, the items which are pan fried, use the airfryer. For small items that could fall through holes, use a small pan that can fit in the airfryer. For the rice, I always cook extra and pack them per serving and freeze it. Pickled items I usually make a jar of it so I'll always have some on hand.

    That's exactly how I fry my tofu! I hate when recipes overcomplicate it. It needs no breading, no pressing, and no freezing. It just needs oil and time!
    I also recommend (if you haven't already) drooping the fried tofu pieces in a sauce and cook in low heat until it evaporates. It's the best way to pack in the flavor. My go-to sauce is water+soy sauce+sesame oil.

    Nisha, I have been a silent follower for a while now and your recipes are an inspiration! I just made charred broccoli and chickpeas over yoghurt and it turned out absolutely heavenly. And the formula is so helpful to eat healthy balanced meals. Using Indian spices makes it feel like i have known the flavors all my life and that's very comforting. Keep on creating and inspiring :)

    I grew up eating collard greens so I always use them in place of Kale in recipes. It’s great and underrated imo :)

    These are great blueprints. I fixed a Mediterranean-ish combo today and it was so tasty. I used hummus, quinoa, and a mixed salad of shredded carrot, red cabbage, red bell pepper, and cucumber; all tied with a basil vinaigrette. For the meat eaters I made a few sautéed lemon/paprika shrimps, everyone loved it. Thank you for sharing your wonderful ideas, such beautiful soul. 🌈💜

    I discovered a trick with chopping broccoli. I cut through the stem but I stop before I reach the florets and just pull it apart then you don't end up with all these little pieces everywhere.

    Broccoli stems/stalks are the best bit! If you don't want them in your current recipe, then put them in the fridge and use them in soups, or chop small for salads, Yummy! Nisha, you are truly the best with your free guide - I will find it much easier to put together interesting flavours and combinations using this 20 minute formula. I appreciate you sharing the recipes very much! Wow, no peanuts! I would have to keep eating them though, or using them whenever I was cooking for people but my partner wasn't there. Almond butter is good, but it's not peanut butter, which I love even more. Thanks again for another informative and entertaining video - oh, and don't you listen if people comment negatively about how you use a lemon squeezer (or any other gadget). If they aren't being constructive and suggesting something that would make your life easier, this is your channel - just ignore them!

      As for the broccoli stalks- any firm vegetable really - take a vegetable peeler to it! I do this with radishes all the time. It adds a lot to a salad without giving you huge chunks of “Wow, that’s broccoli.” Also works great for the apples in a Waldorf salad.

    Just made Sesame Cabbage Slaw and Edamame with Spicy Almond Sauce because I knew Hurricane Kay was coming up from Mexico, and we’ve got hot, dry Santa Ana winds, so I bought pre-prepped carrots, cabbage and edamame, and used leftover rice. This was perfect for when it’s too hot to cook. Love the crunch, tartness, richness, and spiceness. Thank you.

    Just made the Charred Broccoli with Za’atar Garbanzo Beans and Lemon Garlic Sauce, and it was goooooood! I pickled a jalapeno and we really liked the flavor. Our favorite of all three of these recipes is still the Sesame Cabbage Slaw and Edamame with Spicy Almond Sauce because it’s like a crunch party with colorful decorations. I’ll make all of these recipes again since, like all of your recipes, they’re pantry friendly, delicious, fast and not boring!

    YUmmmm. Thanks for this!! I feel like i never switch up my meals so this is awesome! Side note: If you want a little extra flavour to your crispy tofu... my go-to that vegans and non seem to LOVE, is putting the slices in coconut oil in the pan and then add garlic powder and sea salt. Flip, add to the other side....brown them. OMG. IF it makes it to the plate, it would go great with that sauce!! But seriously, I usually have to make two batches because I will full on eat a whole package of tofu right out of the pan.

    Good tip about roasting the broccoli- I live alone and am partially disabled so I don’t have much energy and the thought of preheating an oven to roast a small amount of broccoli (or any veg) just for me, is too much!
    Also we’re all being more careful about not using too much fuel for climate crisis reasons, so I’m glad to hear you going for using a pan to roast veggies! I’ll do this more often :)

    I've already made the cabbage slaw with peanut sauce a few times since I saw it on your website and it's one of my faves! Definitely a new staple in our house, even my partner who isn't a big salad fan loves it

    I love that you say that the type of vegan yoghurt is important. The fact I can actually get ANY vegan yoghurt/tofu/ tahini etc here is a very recent miracle! I miss few things about my home country, but well stocked shops, Asian stores and health food stores are one that I do dream about.😢😢

    I was super bummed to learn about the arsenic in rice. We love rice, even my super-picky daughter could eat it every day so now I have no idea how to proceed. Could you give us some tips on how to minimise the arsenic intake, which type is better etc. I love your videos and I’m always proud when you name an ingredient or condiment and I have it. Kitchen goals all the way.

    Just sharing my common way of getting fast meals :) I like to steam or blanch my veggies while cooking my protein in a frying pan, so that they get cooked at the same time. Then I add into my steamed or blanched veggies some soy sauce, aged vinegar, and toasted sesame oil or chili oil, so that they become as flavorful as stir fried.

    09:55 This is the only way I'll eat kale now!! I'm not a huge fan of bitter greens, but I know they're good for me, so this garlicky kale recipe is such a life saver! It makes eating veggies feel like a joy rather than a chore!!!
    (And i know this is an older video, but im commenting bc I always use this kale recipe and always have to go looking for it bc it's not on your recipe website. This is like my 10th time making kale like this, but I still haven't memorized the recipe yet, lol)

    Love these recipes, I’ve been struggling for inspiration as I’m new to plant based cooking but these look perfect. I’m one of the people that can’t eat cilantro (yuk) so I’ll just leave that out, or substitute another herb

    This is one of those rare 20-min meals that I actually want to try - especially the last one, since I was trying to incorporate kale, but didn't know what to make apart from using it as an add-on to other dishes. You having topped it all with sauerkraut was like a cherry on the cake, because I love it and have it on hand all the time!!! I also would like to make the almond (peanut) sauce and your first recipe too (albeit without chillis)!

    I just tried the garlicy kale recipe and I’ve gotta say - the flavors in this dish are on point! That said, it did take me well over 20 mins to make. I think if I make the sauce, pickled onions, and prep the kale in advance, I could probably do this recipe in 20 mins

    I also love roasted broccoli but baking broccoli in 90 degrees heat with no ac is torture!! Love your ideas! Never thought to do that with broccoli! Can't wait to try!

    I use to not like oatmeal either. Now I put vanilla yogurt, blueberries (which I use to not like either) and sausage! Yes vegan breakfast sausage in it and it’s delicious! I didn’t like oats at all, now I love them! Guess I got use to the flavor but also when I eat something several times, that 1st strong taste magically becomes mild. I tried blueberries with strawberries and gradually the taste became delicious.

    So glad to have these quick recipes! I got in a rut where the only dish I’d actually cook every week was PUL’s Spicy Garlic Tofu, and I needed fresh inspiration. It’s way too hot, and I’m too stressed out to do any prep work longer than 20 minutes.

    Love. I like to do quick meals like this as well, a protein, some sort of green veg, and a carb. Lately its been hot and I didn't want a hot meal or a salad, so I made a cold sesame noodle salad with some angel hair, broccoli and tofu

I have been trying to convert to 100% veggie, but currently at about 90% (still eat some fish and chicken), but it's really difficult with a carnivore loving husband who is a lot a bit stubborn when it comes to food. 🙂
