    I love the simplicity of this, sometimes I complicate myself with extravagant meals and put that pressure on myself but why? This is so easy and good, 2 hours on a sunday is PERfect

    I love chick peas and cashews. I'm in Brazil and they're so expensive: 500g costs 6,99 - 11,90, in the natural food store they're 5,50 oer 100g. And cashews are the same, per gram. They're a treat for me. Every once in a while I buy R$10 (a measly handful) of garlic cashews. And the fruit is grown here. Go figure!

    You are amazing! It takes a certain kind of expert to do this. Anyone to throw together a great outfit from a store full of clothing, only a genius can create a vibrant capsule wardrobe! This is even better because we can do a new one every week! I’m thinking about how pantry and fridge staples could stretch it even further...A soup made from the sweet potatoes, a layered veggie “lasagne” using whatever that pasta was, kale/chickpea/sweet potato taco salad in a tortilla bowl, etc. You inspire us! Please, please do a series on this type of meal prep. Maybe pick a slightly higher number of ingredients, or don’t count a short list of staples, and feel free to go under the number.

    Everything looks so good. Think I'm going to have to try all of these. I meal prep for work but not like this. I usually make a big batch of one thing but I like this idea of having different things with the same ingredients.

      I used to meal prep that way too, but I found that after the second day, I was tired of eating the exact same meal, so now I meal prep staples so I can mix and match different meals throughout the week :)

    I am researching my options for eating healthier and found your channel. Oh my, your food looks so yummy. I want to try them out. I have a question regarding the sweet potato meal. Did you warm up the sweet potato and other ingredients before you put them on top of the potato or is everything straight from the refrigerator?

    Is it important to use whole grain breads and pastas?

      Hi Mary, they have more fiber, protein, and are overall better in nutrition (also less processed) than white pasta and bread, so I try to eat whole grains/breads as much as possible. But I still love traditional pasta and baguettes and have those from time to time as well.

    This is the video that got me to try vegan food even though I’m not vegan because you made it seem easy and fun (and tasty)!     I love this idea! I have to admit, after FAR more hours than it took you, I was only able to manage the kale and sweet potato prep, and then the pesto and cashew milk. You sort of sneaked in the "plant-based milk" ingredient, which I don't have, but I used water instead, and the cashew cream tasted ok to me (though I have nothing to compare it to). It was all still delicious so far, and I'm looking forward to preparing the meals. The concept of buying a few ingredients that can work together for the week is terrifically helpful.

    Love this! Other than the fresh basil and tortillas, these are all ingredients I almost always have at home including now. I may do this plan for next week's lunches. Sprouts has a good WW lavash I like for wraps. I need to watch this again. I've been getting better at meal prep. This is my style. I would eat all of that.

    Hi, can you use raw cow farm milk in the cashew cream which will store for 5 days as opposed to vegan friendly milk. I’m not vegan but like the concept of your cooking and would like to incorporate dairy products into your recipes.

    I happened to have all the ingredients for these meals and decided to give them a try and oh. my. Gosh...so good!! I wondered about the pesto on the sweet potato but it was delicious and ive eaten the wrap (minus the sweet potato cuz.i just keep forgetting it) for the last 2 days and could definately have it again.

    Why does nooch have to smell so bad and look like fish food? Love your recipes but would have omit the nutritional yeast or find an alternative if there is any please let me know.

    I love these recipes, going to start buying dry chick peas so much more affordable, plus they're my main pantry commodity next to nutritional yeast & lentils! Does it matter if I purchase true Sweet Potatoes (light yellow) vs. yams (orange)? I love the true ones for their sweetness, but not sure if they'll work as well as yams for these savory dishes.

      Yes, love dried chickpeas! Super affordable and I find the taste/texture is a bit better than canned. Plus, you can cook them with flavorings like spices or chopped onions/garlic for more flavor. No, just use whichever sweet potatoes you like :)

    Kind of if you can chop those meal preps into individual videos, so one doesn't have to try to view multiple prep videos to find one recipe, but I do love the whole meal prep videos also

    Oh, will defenitly try the wraps :D I usually do a monthly chickpea and bean prep where I cook up a huge amount and freeze them in portion sizes 😊

      @@RainbowPlantLife Unfortunately you cant use the instantpot to make such large amounts :/ Too much foam is produced , even on 1min the beans turn out mushy because you have to do a natural release to avoid all the foam to burst out

    Question
    I’ve been vegan for 4 years now and I’ve really tried to like cashew cheeses and creams but I’m just not a fan of them.
    What can I use to substitute them?
    P.S I love your videos! And I just had your instant pot cook book delivered from amazon yesterday.

    Great video! Here is a time saver on the sweet potatoes: Cook in microwave in a brown paper bag, (use fork to puncture skin so they won't explode!) Cook on high for about 10 minutes (for 2 large sweet potatoes)(depends on microwave power on the time), test for tenderness by inserting a fork. The potatoes come out like you have baked them in oven. You can do any potato the same way.
