Pancake day is approaching, traditionally the start of a 40 day fast for lent. It's that time of Year when people make bad pancake pun jokes and flip pancakes for giggles. I've learnt a few handy tips over the Years, from making my own pancakes for pancake day to getting my Daughters flipping pancakes too. In fact here's a full playlist for pancake day inspiration through the Years • SPINACH, HAM, ONION & ... . This video I keep it simple with the good old lemon and sugar pancakes plus some Nutella, banana and coconut ones but also chuck in a load of tips too. For example freezing the batter or pancakes to make ahead, def a time saver. Remember a pancake is for life and not just for pancake day ;-)

I have never had a professional lesson & am just your every day chap attempting recipes to inspire you guys to try too. Most uploads are how to recipe cooking videos, but some fun is had too on Sunday Funday when anything goes, including giant foods, mini foods, taste testing foods sent from around the World, food gadgets and many more. Any requests for recipes / cool stuff you've seen let me know! I try my best to reply to as many comments as possible, but please interact with eachother and be respectful :-) #barrylewis

For anyone that doesn't have the equipment to measure the ingredients, use a tablespoon, you will need:
    21tbsp of flour
    30tbsp of milk
    1tbsp of butter
    a pinch of salt
    2 eggs

    Ingredients:
    300g plain flour
    Pinch of salt
    2 eggs
    1 tbsp of butter
    600ml milk
    Method:
    1. Sift 300g flour into a mixing bowl
    2. Add a pinch of salt and mix together with the flour
    3. Crack and add the two eggs
    4. Add 300ml milk and whisk together (try to make it less lumpy)
    5. Add the remaining 300ml and mix until completely smooth
    6. Butter or oil the pan and cook the mixture on a medium heat.
Sorry if this annoys anyone, I'm just writing the recipe out so that I'll remember in future and not have to look at the video

To all the people that say this is a crepe ; these are pancakes the only difference between American pancakes and other pancakes is that in American pancakes you guys use baking powder or self raising flour which make them fluffy whereas in this case he only used plain flour which makes them look like a crepe which is perfectly normal and can still be considered a pancake. end of

Lack of patience coupled with complete culinary ineptitude usually results in burnt offerings. For some reason, following this guidance I've just created the best pancakes I've ever made in my life. Thank you for showing me the light!

To avoid lumps in the first place, whisk eggs and half of the milk, then add half of the flour and whisk. Then add the rest of the milk and flour. Also, practice to flip it in the air, this will also help you when making omelette. Make one pancake, turning it with a spatula and cooking it all the way through, then practice flipping it, using your wrist. Do it over a clean kitchen table, when you miss, just pick it up. Keep going until you can flip it 3-10 times in a row, or until your hand is fatigued. Do this every time you make pancakes, after practising about 5 times, you'll never need a spatula again. Again, the trick is to use a cooked pancake over a clean kitchen table. Don't practice with a pancake that's only cooked on one side, or an omelete, because when you fail, you'll ruin it and make a mess.

This is a British video and describes British/English PANCAKES which are thin like crepes and include no raising agent , though typically are cooked a little thicker than french crepes . In the UK raised pancakes with baking powder are known a Scotch Pancakes or American pancakes. Lemon and sugar are favourites with British pancakes but we also do all the stuff the french do with crepes! We fill them with ham cheese while on griddle them fold them et c. Sometimes we fill them and wrap them up and bake them in a bechamel or tomato sauce . Sometimes they have sweet filling and cream - sometimes they get alcohol liqueurs! We might eat them while watching the football (soccer) on TV I've even been knon to have a savoury pancake with chips (fries to you guys!)

The problem you get sometimes with this kind of recipe is that they don't cook well enough in the middle. Using self-raising flour will help a lot - you can make them just as thin but the little bit of bubble will help them cook and your results will be more reliable. The other thing that's important to do is to use room-temperature ingredients. I usually mix the eggs and milk and then zap them for 20-30 secs in the microwave since they both came out of the fridge and will make it that much easier for the batter in the middle of your pancake to cook before the outside burns. You may also find as you are cooking that the mixture doesn't spread thinly so you might need to thin your mixture carefully a bit - it should spread out across the pan easily. Once it has spread out you can make the surface more uniform by shaking the pan backwards and forwards to force the liquid to flatten out more. Personally I think white sugar is boring and they go better with lemon and soft dark brown sugar and if you're decadent a bit of whipped cream. It's also a good idea to add a tablespoon of rum or a little vanilla essense to the batter. Brandy is also nice. If you want to vary quantites then your ratio is about 100g flour to 1 egg and enough milk to get the mixture to spread. The amount of sugar and butter/oil doesn't seem to matter much but I use about 15g sugar to 100g flour and a dessertspoon of oil (to make it less sticky) and then a little butter for taste.

I can (and do) make them in a cup, basically since I made the kids pancakes one day for breakfast, now they ask for one EVERY SINGLE MORNING going on for 3 years now. So I save time by throwing 1 egg, some plain flour and some milk in a mug, whisking it with a fork while the pan heats up, then I make a small 3 stack for each of the kids. Can do the prep, cooking and cleaning in under 15 minutes.
It's my own fault. Should never have mentioned pankcakes in the first place...
