    Kris, bacon slab is just bacon except it comes in slabs and not sliced. It is not eaten like sliced bacon that you have during breakfast. Bacon slab is also use in bouef bourguignon, coq au vin and callous.

    I lived in Valencia, España for sometime and I swear this is nowhere near, not a even microscopic fraction, close to paella valenciana. Paella valenciana uses chicken and rabbit and the ingredients and cookng method are very very different. Why not name this with something else like paella de filipinas?

      Uh... We were given this recipe and name by the Spaniards based on what was the availability of ingredients of the colonies aka New Spain. At the time we did not have the option to name it anything else because we were told this was what the dish was called and it stuck just like how different South American Countries and any former spanish colony makes it. in your defense, yes it is nothing like the coveted original Paella, and many filipinos also call it "arroz valenciana" or "bringhe".

    Oh, my!!!! Pati ba naman pag "ma-ma'am" pinapansin. I think Ilokano ung chef usually sa mga ilokano talagang ganyan "ma'am ng ma'am". Wala namang masama dun unless sinabihan na syang wag ng mamamin. Eh anong gusto nyng itawag nya Kris na lang? Imute nyo para di nyo marinig. Nakow!
