    Oh my goodness Albert, that looks sooooo good! I'm glad that you talked about the socarrat (what Puerto Ricans call pegao). It is such an important part of the flavor. I had some beautiful caramelization on the bottom but couldn't film it - my family was attacking the paella lol :) I had a lot of fun doing this collaboration with you and I love your version of the paella - can't wait to try it out!

    Thank you very much for sharing your recipe. My husband and I went to Madrid in 2018 and was excited to try the Paella but we were very disappointed with the taste.
    I tried your recipe today. I read that for the Paella to be a success we have to use the right rice and has to use Saffron. I bought the Calrose rice and Saffron. I made some substitution with the tomato puree with a mixture of 1/3 cup tomato paste and 2/3 cup water, I used 1/2 cup of this to the mixture. I boiled my shrimp heads and peels with 3 cups of water, seasoned with salt and pepper and then strained it and used this as my broth. My husband doesn’t like squid so I used scallop instead. I was skeptical that it might not turned out well but the result was so Delicious, my husband was in food heaven. Thank you very much. God Blessed.

    This is the best and easiest recipe you can find. Very detailed. Not one question stated unanswered of what, how much, when and how.
    We go to Spain every year for food and experience of it. With the lockdown, this recipe brought our whole family back to our little place in VLG every time we cook it and share this taste of “our Spanish getaway” with friends and family.
    Thank you Alberto for bringing VLG 🇪🇸 to SF 🌁
    Here is the list of items I created for our 15” pan:
    PAELLA 🥘 RECIPE:
    - [ ] 2/3 cups of oil
    - [ ] 1 cup of tomato purée
    - [ ] 2 teaspoons salt
    - [ ] 1/2 teaspoon black pepper
    - [ ] 1 teaspoon smoked paprika
    - [ ] 2 cups rice
    - [ ] 5 cups of fish broth
    - [ ] Foil and towel to cover
    - [ ] 15” pan 6 full portions or 8 small portions
    - [ ] 6 gloves of garlic mixed or pressed
    - [ ] 1 medium onion minced into 1/4” pieces
    - [ ] 1 red bell pepper minced into 1/2” pieces
    - [ ] 2 medium squid tubes minced I to 1/2” pieces
    - [ ] 24 jumbo shrimps
    - [ ] 24 small scallops
    - [ ] 16 mussels
    STEPS:
    1. 4 min. Heat up oil and half teaspoon of salt in a pan. Medium high fire 🔥 .
    2. 2 min. Cook squid 🦑 for 2 minutes and remove.
    3. 1 min. Cook onion 🧅 & garlic 🧄 for 1 minute.
    4. 3 min. Add red bell pepper and cook for 3 minutes.
    5. 2 min. Add tomato 🍅 purée, black pepper, salt and paprika and cook mixing for 2 minutes.
    6. 5 min. Put back the squid 🦑 , add broth & “Paellero” spices and bring to an even boil.
    7. 5 min. Add rice 🍚 evenly across all pan, and mix carefully and cook for 5 minutes.
    8. 5 min. Add shrimp 🦐, scallops and mussels on the top and cook for 5 min on med/high 🔥. Don’t mix anymore. Just shake once a minute.
    9. 10 min. Then change to low/medium 🔥 and continue cooking for another 10min. Only shake once a minute.
    10. 1 min. If you want burned bottom, increase heat 🔥 to medium/high at the end for 1 minute.
    11. 7 min. Turn of fire 🔥 and cover for 5-7 minutes with foil and towel.
    TOTAL COOKING TIME: 45 minutes
    Now onto other tapas on you list!

    Oh this looked excellent. We like to eat burnt rice in Korea too - called nooroongji. Seems like most countries that eat alot of rice treasure that scorched rice!

      My grandmother (British) made the best rice pudding. She always let it brown so it would've have that slight crust. That was soooo good. I never order rice pudding in a restaurant, because I know how disappointed I'll be when it's all soft and white.

    It’s so cool that u mention the socarrat. Koreans call it nuroong-ji and its awesome that different cultures have a specific term for it and enjoy it as a part of their dish!

    I tried it last night and it was so good. Thank you for the recipe and especially the technique of making the soccarat. Paella is very expensive in my country, served in Spanish restaurant. Now I can make my own for a fraction of the price.

    THANK YOU for sharing this 😊 After growing up on basic meat and potato dinners, I've become very curious to try new things as an adult. I just made this for dinner tonight with the addition of fresh clams along with the mussles, and I swapped fish broth with veggie broth since I had it on hand. I ordered paella rice and stuck to the recipe otherwise because I wanted to try true seafood paella. It was my first time trying clams, mussles, and squid...a yummy adventure! I discovered I need more squid in my life ASAP.

    I made this seafood paella yesterday and it turned out superb according to my spouse.
    But I think it would have been better if I put the shrimp and mussels much later, say 3 minutes before covering the pan.

    I followed this recipe and it came out perfectly. Although I did get scared about the fish so I cooked the muscles and shrimp separate first but still came out fantastic and everyone loved it! Make sure you don't forget the saffron as that's what makes it, I got mine from Walmart. Thank you 😊

      Yes, I was wondering about the shrimp being cooked so long?! I don't like mine overcooked. However, I am willing to try this recipe his way with the biggest shrimp I can find, since I do want them to soak up some of that great broth and flavor.

    Como valenciana, esta es una de las pocas paellas que he visto por Internet que sí parece paella. Aunque claramente, las paellas a las que estoy acostumbrada son en su mayoría hechas a leña. Te recomiendo que lo pruebes, hacerlas de la forma tradicional siempre resulta mejor.

      You are so right. Me too. Just love the authenticity of this traditional Spanish dish. In different regions they put in different ingredients. I have had paella with chicken and rabbit in, also had the seafood paella which is my favourite. Yum. Got to try this wonderful chef's version.       Spain on a Fork amazing! Bro it was so good. I also notice you don’t add wine like many Italian or french dishes. Wine is nice to tie ingredients together but no wine like this really lets you pick up on the subtleties of flavor. Again great vid man. Btw, i made it on a charcoal bbq over 🔥

    Delicious.
    Second time i've done it, and it's a hit.
    Just an advice from my personal experience, add the fresh shrimp whole and add them the last 5 minutes of cooking, then it will cook perfectly once you cover and rest the rice.
    That way the shrimp will be plump and tender. If you add them peeled and early they will be dry and dull.

      Rabbit is the more traditional. Peas and garlic as well should go into it - every family has their take on it. We never used brown rice.

    I tried this, it was epic!! I am going camping this weekend, and plan to do it again, with mussels from our own farm, monkfish and scallops from my friends trawler, queen scallops from our friends scallop ranch, runner beans from my garden, and prawns and squid local shop, but with the addition of 3/4 large springs of rosemary for flavour and scent when serving, its delicious, thanks you Colab!

    hey this looks amazing but I am just curious. Won't the squid over cook and become rubbery? As far as I've understood that seafood always takes very little time to cook and it's often frowned upto to over cook it. So just curious about the cook time on that. The dish looks amazing though!!

    OMG I learned how to make Paella in five minutes ! I had to use Calrose (Sushi Rice) instead and used 2.25 Cups of Broth to 1 cup of Rice. Perfect. Muchas Gracias por eso Senior, la comida estuvo deliciosa esta noche.

      That is something I learned from a lot of chefs here in Spain, it helps the seafood or any meat or veggie not make the oil jump out of the pan while your cooking it, much love
