You sound like you have an English accent or one of the accents from the British Isles so I'm hoping you have the answer to a question I have about Haggis. Is there an organ that can be substituted for the sheep's lungs in haggis? Is it still haggis if you forgo the use of sheep's organs?

Tried back legs up for the first time today, ended up peeling off the whole outer membrane somehow. Never done that starting front-legs-up. Is there some trick to punching up the hind legs?
I have yet to skin one without peeling of the membrane as well. But I've always done it back legs up, and pulling from top down. After watching this clip I think the trick is to start punching from the front legs towards the back - whether you are doing it front or back legs up. This way the membrane doesn't start separating while if you start pulling down the back legs it always pulls for me. I have three lambs ready to be slaughtered in a couple of days and am definitely replicating Benny's method this time. We'll see if I get some more success!

Dexter Russell high carbon lamb skinning knife, they're not stainless so you need to keep the blade oiled so it doesn't rust. They keep a great edge for a long time.

When I started doing this 20 years ago I was trying to imitate the more experienced guys trying their ways but eventually I ended up with my own way of doing it and I think that's why they say there's many ways to skin a cat or a lamb in this case so everyone has to figure out the best way for them selves I guess.
We don't throw away the small intestines, instead we wash them thoroughly with sodium bicarbonate and water+ vinegar. And we make a delicious intestines stew, i know that it sounds strange😅 but is a traditional romanian dish and until you try it you cannot comment..
Hey mate just watched your vid and it is by far the best one on here that I have found so far. I am doing one on my own today so the info is going to be a good start just have to remember the steps. I have yet to skin one without peeling of the membrane as well. But I've always done it back legs up, and pulling from top down. After watching this clip I think the trick is to start punching from the front legs towards the back - whether you are doing it front or back legs up. I have three lambs ready to be slaughtered in a couple of days and am definitely replicating Benny's method this time. We'll see if I get some more success!

Yes, I've had a few tanned after skinning them this way. They are quite easy to do because there is no flesh left on the skin.

what's the bit of skin you take off from the neck right at the end and why does it make the lamb rot?
its not the skin. its lambs sweetbread and they perish very fast unless you you quickly harvest it and put it in freezer
Its just a piece of meat where the wind pipe runs through, if you don't take it off blood and stuff will pool in there and make it go rotten faster.
