Whether you are a tourist or not, if you go to any village in Transylvania on a winter day before Christmas, you will surely hear a pig chirping for the last time. Pork cutting in Transylvania is a tradition that manages to bring the whole family together. The whole day is in fact a ritual that must be thoroughly observed so that the resulting preparations enjoy the whole family for the rest of the year. the most important moment of cutting the pig is the removal of the spleen. The elders look at this moment with interest, because they know that if the spleen is thick in winter it will be heavy but in summer it will be fruitful, and if the spleen is thin in winter it will be milder but in summer it will not be as fruitful.
Another important moment is the roasting of the pig. In the past, this was done with the help of straws, the taste of the mouse being much better. But this custom is less common today, as it is common to use gas burners. After the proc is well browned, its rind is cut, one of the moments of joy for children, crazy about rattan and pig ears. If the pig is old, it will not be skinned, but from its skin the elders of the country bury their sticks to keep them warm in the house. After the rind is over, the entrails begin to come out: sausages, calabash, drum, blood sausage and more and more, all filling the pantry and the attics of the houses in the country.

At first I thought why are they eating the pig's skin before cooking it and then they surprised me again by cutting from the back portion of the pig :) But hey I totally enjoyed watching everything. Lovely tradition

@@user-yk7dc4ll6x вася ,я и спрашиваю где кровь, я их если че сам колю в сердце и вся кровь остается внутри грудной клетки, достается по мере разбора порося ,кружкой обыкноаенной и в тазик или в ведро. Здесь же я вижу били в артерию, с учетом того что порось сразу не умирает я предпологаю что кровь вся на земле, он ведь не стоит на месте ,послушно отдавая кровь. Так понятно будет? Так что пизду не нужно мне тут задувать. Или ты всю деревню собираешь чтобы держать кабанчика, пока он истекает кровью? )))) специалисты блять. Спецом полазил ,при таком забое ,кровь вся на полу. Так что пизди кому другому, как ты видел)))), клоун.

Свинью фиксируют, режут сонную артерию, или яремную вену..Если возможно, подвешивают...При таком способе вся кровь выходит...Да, и хамить не надо, быдляком с родителями своими, что тебя, мудака воспитали, общайся...

That I would say is a strange and at the sametime interesting practise to us in Asia to peel and eat what seems like semi raw pig's skin. For us in Asia, we do eat pigs skin but only after roasting with a deserving dose of marination. That does make the pig skin crispy and very delicious.

It is put in salt for about 3 weeks, then smoked with beech wood. It is eaten raw with cheese, tomatoes, onions, it keeps very well until the next year

Zuerst wurde die Haut mit einem Gasbrenner gebacken. Auf diese Weise wurden die Haare verbrannt und die erste Hautschicht entfernt. Dann wurde die ganze Haut gründlich mit den gleichen Brennern gebacken, bis sie schwarz wurde. An diesem Punkt ist die gesamte Haut zu Fett gekocht und ein wenig knusprig. Der nächste Schritt besteht darin, die verbrannte und schwarze Haut mit einem Messer, einer harten Bürste und heißem Wasser zu reinigen. Wenn es dieses Stadium erreicht hat, ist die Haut gut gekocht und dünn, sie wird gut mit Salz eingerieben, weil das Salz sie weicher und schmackhafter macht. An dieser Stelle wird die Haut des Schweins "șoric" genannt, weil sie auf diese Weise gekocht wurde und gegessen werden kann.
