The knife scabbard tells you this man is the real deal. 66 kg is big. I’ve seen bigger on the Falkland islands when they aren’t stepping on mines. My question is why don’t they shear them before slaughter. I know they use the hides. But do they use all of them?
Plenty of flavor in an old ewe. I would keep the chump chops or back strap for the barbe. Be interesting to see you dress her out just to see the fat level. I've done 2 year olds that have had plenty of fat around the organs but have been quite alright on the legs and chops. Nice job, I think I learn a bit more every time I watch you work.

Hey mate I make a few snags did two killers for a cockie one lamb and a big cross bred weather not 100 percent sure now it was a few years ago but the break down was like 22 kgs bone 24 meat 26 fat I used a backhoe to get him in the cold-room they hard work them big fullas I don't think I've ever seen anyone do a sheep upside down like that but you got it off her
I had a large weather x poldorset in with the rams overfed as had to feed the rams to get to the chicken eggs never weighed it but couldnt lift it at all 😂 all the fat went to the chooks (helps with egg production)
Looks like you took your Victory beef skinning knife handle to the belt sander to remove the raised texture. I'm definitely considering doing the same, stuff gets caked in the grooves and if you have to bear down on something the texture is too aggressive.
It's very good. I used a recipe from Malta, great flavor. Season with oregano, rosemary or marjoram. You can also just pressure can stew meat and it makes its own broth.
What's the purpose of killing the old one? Just useless and costing money to keep pests off and out of her? My Grandad always said sheep are expensive to keep. My uncles mate has goats, and he just lets them roam, don't know if he sprays them ect.
