    This crispy Korean vegetable pancake (Yachaejeon: 야채전) is the perfect appetizer or late night snack to enjoy with your family and friends. If you follow my technique, you will end up with the thinnest and crispiest vegetable pancake that is top notch restaurant quality. Feel free to experiment with different vegetables that you like. Traditionally, this is commonly made with loads of chives, but I personally don't like chives so I used shredded kale, which is not traditional at all, but it ended up working perfectly.

    Yachae jeon is one of my favourite recipes. In fact, I am yet to find any kind of jeon that I don't absolutely love! Haemul pajeon is top of my list so far, but I have many more still to try. It's been about eight months since I discovered Korean cooking through Maangchi's videos and now I eat Korean more than Western food. My cupboards are full of gochujang, ssamjang, flours, starches, fresh produce, sesame seeds, oils, tteok/rice paper... I wish I had discovered it earlier in life! :D

    I was inspired to make this recipe and it was absolutely DELICIOUS! The only modification that I made is I used Coconut Nectar instead of sugar in the dipping sauce so it had less sugar, but still some sweetness. I used a potato stamper to flatten my pancake in the pan which worked great. I can’t wait to try more of your recipes!!! Thank you for your easy to follow recipes!

    This video is so insightful. I love yachaejeon and have tried making it like 4-5 times and always the problem was that it wasn't crispy and the middle part will be quite moist. I always thought I didn't cook it well. I will try making it thin like you said. Also can i use spinach instead of kale ?

      Yes, the trick really is to make them thin & get a good double fry on each side. It takes a bit of practice to get them super thin but we’ll worth it! I wouldn’t recommend spinach because it has a lot of water and won’t get as crispy.

    This sounds great. Just learned to make Korean vegetable & shrimp pancakes. Now I want to try these.
    Would shredded red cabbage also work? Say red cabbage, carrots , mushrooms & scallions mix? (I like scallions…)

      Hi! Cabbage is tasty and will definitely work but it doesn’t get as crispy as kale because cabbage has a higher water content. Scallions will be a great addition. 😊👍

    I tried this for the first time but honestly i made it so thin that vegies didn't even stick to each other then i had to had more all purpose flour and water then my yachaejeon brok on the pan which turning it over but still i managed to cook it but at the end it didn't turn out to be perfect cause it wasn't crispy but it tasted good i will try again next time to make it perfect 😅😅😅😂

      It takes some practice to get them thin and crispy. It took me several tries to get it down too 😊

      Just make sure to read the ingredient label. Most of them don’t have fish products in them but there are a few brands that do have fish products in them. Always read the ingredient label.
