Ingredients:
White Pumpkin - 1/2 Kgs
Dried Chilles - 10 -15 Nos
Coriander Seeds - 5 tspn
Finely Chopped Coconuts - 1 Cup
Cumin Seeds - 2 tspn
Mustard Seeds - 10 gms
Curry Leaves - 10 gms
Tamarind Squash - Needed Amount
Jaggery - Needed Amount
Salt - Needed Amount
Method:
Take few dried chillies, 4-5 spoons of Coriander seeds, ½ lagoon of coconut and 2 spoons of Cumin Seeds. Grind it all together with needed amount of water till it becomes a fine paste. Take another pan, cut White pumpkin into small cubes. Now add oil to the pan fry few mustard seeds curry leaves. Then add those pumpkin cubes till it gets coated to oil. Later add water. Cook those pumpkins by closing the pan. When it gets cooked 3/4th Add tamarind squash and water, jaggery. Boil it all well then add the finely grinded paste to the pan. Now add needed amount of salt. Cook it for 2 minutes. Now the udipi sambar is ready. Serve it hot.
