BLT Full Recipe:
10 oz smoked bacon
1 large ripe vine tomato
1 head of living lettuce
2 slices of sourdough bread
Basil Mayo Recipe:
2 large eggs (100 grams) or 3.5 oz
2 tbsp water (45 ml) This is different than the conversion you find online but it is CORRECT
3/4 tsp Maldon salt
1 1/4 cups avocado oil (295 ml)
2 cloves garlic (8 grams) 0.25 oz
1 Fresno chili rough chopped
2 oz fresh basil (56 grams)
1/2 lemon juiced
1 tbsp + 1 tsp distilled white vinegar (50 ml)

I made this after watching this video, I cannot explain how much the mayo pops. It’s not even fair to call it Mayo anymore, it’s in a completely different league. Gives the sandwich the perfect amount of spice, acidity, and lightness, filling in everything that the bacon and salted tomato lack. Thank you dude!
Here is why Chef Sonny is so important: he reminds us that one unknown man can become more important than a celebrity chef with a film crew, dozens of handlers, and a gang of producers. When I now wow my wife, she asks “is this Chef John or that dude can cook?” I love that these TH-cam chefs have become to many of us more important than any of the “superstars.” Sonny is a treasure.

I was looking at that knife, it looks like my Grandmother's knife that was handed down to me. My nephews broke into my house one day to see what I might have they felt was theirs and that knife was one of the items they took. What is its name and where can I get one?

It’s so awesome that you cover things like how the boil should look. I’ve always wondered about cooking shows, why doesn’t anybody ever cover the topic of how to treat things with heat and what it looks like and what it sounds like and what it feels like. It’s one of the most challenging parts of cooking when you’re brand new. What the fuck is medium heat anyway? So thank you that stuff is helpful.

Oh, yeah! I'll never make a BLT like my mother did again...and I LOVED her BLT's. This makes complete sense!!!
I had an idea for a variation of a BLT the other day. I tried it tonight, and it was pretty good, if I do say so myself.
I call it the BLTB.
That's Bacon, Lettuce, Tomato, Biscuit.
For the biscuits, I used those small refrigerator biscuits that come in a can. Just bake them up according to the directions.
For the tomatoes, I used Roma tomatoes. When you slice them up, the slices are the perfect size for the biscuit.
Each biscuit gets one slice of bacon. If you like your bacon kind of limp after you cook it, then you fold it however many times it take to put it in the biscuit. If you like your bacon crispy - even a little crunchy - you break your slice of bacon into pieces that will fit inside a biscuit.
And of course, there's the mayonnaise, salt, and pepper, and a little piece of lettuce.
Once you've got everything cooked and assembled, you just put it together and enjoy.
I'm sure someone thought of this long ago, but it's a new idea to me so I thought that I'd share it.

i used store bought mayo, but i did add a good dollop of garlic paste, bit of olive oil, fresh cracked pepper, and some red chilie flakes. It was delicious. best BLT ive ever made.

Looks good! A tip: I like to put my bacon right on the tomatoes with the mayo so the tomato juice, mayo and bacon flavor mixes together into this incredible amalgamation of goodness, so the center of mine is usually lettuce with bacon and tomatoes on each side.

newbie here i am in LOVE with this man. this version of BLT does nothing for me but the idea of thin sliced tomato x 2 was great to learn. the fridge thing was weird but fun. i could listen to his orgasmic grunts ALL DAY...liked and subscribed!

Just finished off one of Sonny’s BLT’s. I had no Rosemary SD bread just plain SD bread. But bloody hell this is great. Basil mayo is a longterm keeper for so many dishes, even as a salad dressing!.
I thought about adding the Rosemary flavour to the toasted bread by rubbing a bruised Rosemary stem or a cut garlic clove across the warm bread, on the pre mayo side. I need to buy some squeeze bottles as the mayo is runny.
The end result though is nothing less than outstanding.
