I'm a big fan of the BLT but would never have imagined doing it with eggs and onion rings. I usually go with oven baked salmon for my fish choice just because it's easier to prepare. But I digress - what I see here looks incredible. Two thumbs up for you sir!

I really hope the Maine lobster industry can recover from the Covid Crisis. I go to Maine every summer and our house is close to a local lobsterman. We have been buying from him for 20+ years. We always do a big bake and invite him to it too. Some years he shows some he doesn’t, but hey that’s a Mainer. The nicest people you’ll ever meet but on their on time! He told me how brutal missing a tourist season was. That and shrinking lobster population is why the price is so high rn.
It would be absolutely heart breaking if Gordon dropped that beauty while running!

I did that avocado-on-the-heat trick just for making guac. The flesh comes out of the skin much more easily and it mashes much more easily.

The magic of the BLT is its simplicity and how well these three essential ingredients go together. Once you add a bunch of other stuff, it ceases to be a BLT. It's like calling a bacon cheeseburger a "BLT" because it contains bacon, lettuce and tomato.
BLT-bacon lettuce tomato. Gordon's BLT. Avocado, onion, lobster, butter, butter, butter, bacon, seaweed, lettuce, lemon, tomato, egg, etc. Chillll

Bacon is burnt on outside; undercooked inside. Takes awhile to render bacon that thick. Would be too chewy for me, but maybe some people like it like that??
