Hi Wilson, I've been silently watching your vids, and thank you for this gold of infos. I do agree with the soup part. I recently launched my food startup from my own home kitchen. But instead of actual soup, I make congee/rice porridge (so its a soupy kind of rice) and I just have certain toppings that I add to it as my selection, so I can do a batch good for 50 to 100 bowls in one go. What are your thoughts about scaling it as a home-kitchen franchise? I'm curious if there's anyone doing it already since I plan to expand on my brand in that structure.

Have you checked how much a small space in a commissary is? Usually they have flexible rates for like 2 hours a week minimum. So if you could just do all your production there and whatever else at home then that could be the way. Or you could work with a restaurant with a kitchen to make the sauce there if they have all the permits available.
And for legal reasons im not recommending you to do this and just sharing with you what I've seen other people do: I've seen others still operate at home regardless and only move to a commercial kitchen once they get some traction. Obviously that is not legit and a big risk as they also were in a city that didn't allow at home food businesses. I do see a lot of new food businesses that popped up during the pandemic operate this way...it's their choice if they want to run the risk. Again I'm not recommending anyone to do that :))

Hey Wilson, great content on ideas, but in Canada, “Cottage Food Laws” are either non-existent or completely inadequate to allow home-based food producers to legally sell food prepared in residential kitchens. Moreover, as far as I know, all cottage food laws apply to SHELF STABLE, NON HAZARDOUS items only. Anything which requires refrigeration or freezing is prohibited, such as pizza, dumplings, ice cream, etc. On top of that, while Ontario has marginally reduced restrictions on residential food production, they still require onerous, regular permit inspections from

Hello in the U.S.cottage food law prohibits almost half the items you are mentioning?? Pizza dumplings and these types of food though are not allowed they are considered potentially hazardous foods and are prohibited. The information sounds great but from home is not allowed? are guys speaking about U.S. laws? Also is these foods are cooked and served and someone gets sick the maker of the food can be sued.

Dumplings are not that time consuming anymore. Dumpling machines can be had for under 1000 dollars. Especially if you gyoza and potstickers. Create different niche markets in that same spectrum. Everybody doesn't know what a Chinese potsticker, yet ton know what ravioli are, only 1 or 2 more really. Do you have a Polish or Russian community had perogis. Get the reputation as being the persons dumpling house where you can get dumplings from 3 or 3 nations. While buying a ton of the same ingredients yet using different seasonings. Most of the dough are walter, salt. Some may add eggs or oil. So just go get four nations. Open a dumplins hose that covers the world not just one country.
