Thick Fat halves damage from fire and ice attacks. Immunity grants immunity (no pun intended) to the poison status ailment. Also, Poison Jab doesn't always poison, so I'm pretty sure the text talking about Immunity would've come up if Poison Jab had attempted to poison the Snorlax.
