Hello Manjula.. I tried this recipe today . They were nice and soft but i think the batter had thinned down a bit since I had added 1 cup curd instead of half cup. Also We get just super fine rava here in Delhi and i m not able to find course rava.. My idlies athough soft were flat to look at. Since i get super fine rava here can you suggest me some tips to get rhe idlies look like yours?? Love n Regards 💞
Oh I see😊. Sorry for late replay. You can roast the fine rava with little bit of oil. Use one fistful of thin poha soaked in water and add to the mixture. This will help you to get super soft idli. Please try and share your feedback.

😊Yes, you can increase the curd quantity to 1 cup. It will make them a bit more tender and add a nice tangy flavor. Regarding the curd, both fresh and slightly sour curd work well, so it's a matter of personal preference. Enjoy your delicious idlis!

May be there are several reason to turn idli harder 😊 Here are a few tips to help make your idlis softer and more spongy: Batter should be pouring consistency, add soda just before cook the idli & steam the idli on medium heat about 10-12 minutes. Hope this will help!!
I made without eno, without soda. Came fluffy for me. Used 1/2 cup sooji to 1 cup rolled oats. You have to roast the sooji well. Dont soak it, just much with water, curd. Let it sit till the water in the cooker boils and then put the mixture in idli moulds and then steam. Will come fluffy
