This looks great! I have so many cherry tomatoes right now it's ridiculous. I'm roasting them in the oven and putting them in the blender to make a sauce. Have put about 12 quarts in the freezer. I can have that wonderful fresh tomato taste in the middle of winter.
It’s really cool to see Jack using olive oil from my home town! There are a few fine oil producers here. He knew what good ingredients are and only used to best. RIP Jack
In Italy this Is a kind of "Portofino" pasta.. We use only fresh tomatoes sauce,"pesto di Prà" or Tigullio one and some Parmigiano. Try this recipe with "trenette" pasta. 😉
Chef Jack, I noticed that your pasta was in water for not long and I'm assuming you par cooked them before hand? If so, there is always the debate if you should rinse the pasta or not, after blanching it. What's your opinion? Dont know how I found you channel but as a cook that's been in industry for some years, I've been hooked on your videos because it exactly how I learned; Chef demos a dish and you pay attention, take notes and then execute. Thanks for sharing your food with us.
Carlos, At the restaurant I cook my pasta real al dente and end drain it and put it on a sheet pan to cool. I never rinse my pasta, the starch helps the sauce to stick. A trick i learned from a great Italian chef. Jack Become A Member Of “Cooking With The Blues” patreon.com/cookingwiththeblues
@@CookingWithTheBlues I'll become a member this weekend. I've seen different Chef's do it differently. One Chef was insulted and found it a sin to rinse pasta while another one I work for always did. But it makes sense to keep that starch on the pasta so the sauce sticks. Thank you. Happy father's day weekend
