Snow Be Gone! | Celebrating the END of Winter

- Hooray for the end of winter! With spring's arrival and the thaw beginning, it's definitely time to plug in the freezer for the upcoming summer months. We tackle the well over due chore of cleaning it out amongst other seasonal tasks. After Eric plows the snow away from the future garden space, we take a moment to embrace this time of year with fresh berry filled donuts.
~ Donut Dough ~
2 tbs coconut oil
2 tbs unsalted butter
1 tbs lard
1 cup whole milk
2 1/4 tsp active dry yeast
2 eggs
3 cups all purpose flour
2/3 cup cane sugar
1/2 tsp kosher salt
*1/2 cup sweet starter (optional)
~ Filling ~
1 cup lingonberries
1 cup blueberries
1 cup spruce tip syrup
1 tbs cornstarch
1. Melt oil, butter and lard in a small sauce pot. Remove from heat, transfer to a small bowl, add milk and active dry yeast.
2. Add eggs to mixture and whisk.
3. In a medium bowl mix flour, sugar and salt.
4. Add starter to liquid mix prior to adding into flour mixture, mix dough.
5. Knead until dough is well incorporated and smooth texture (will be slightly sticky), allow to rest in a cool area for one hour.
6. Roll dough on a lightly floured surface until 1/4 thick and cut with a biscuit cutter. Allow to rest for an additional 30 minutes at room temp.
7. Add berries and syrup to a sauce pot and simmer for 10 minutes, mix in cornstarch and keep on heat for another 5 minutes, then remove from heat. When cool transfer berry mix to a piping bag.
8. In a deep pot heat oil of choice for frying, carefully fry donuts for 2 minutes on each side.
9. Drain donuts, dip in cinnamon and sugar mixture, stuff with filling while still warm.
10. Enjoy :)

Ariel my mom used to render her own lard and she would use the cracklings in her biscuit dough. I’m 62 and still can’t forget those amazing biscuits. My mom was raised on a farm and boy did she know how to cook!

My grandma made crackling cornbread and served it with collards and her own special beans from her garden. They were kind of a large spotted pinto bean.

Im 70 and have made homemade donuts as a little girl and younger woman . Mom was always making jam/ jelly to fill our home made. 60-66 had extra biscuits for afternoon school treats. Had extra pie crust strips with cinnamon and sugar. Mom passed in 1997 and still have her wonderful cook book or index recipe box. My great neice whose 52 has a cedar recipe box from mom and her aprion and oven mitts. Areial thanks for the memories of our cooking memories blessing

I did an overnighter with my 2 granddaughters. Boy oh boy I feel you on the "WILD" statement.... They are 19 months apart and the 2 year old is tiny but has a big attitude LOL I am ready for a nana nap and it's only 11.30am I did the daycare drop off and it's other grandparents up tonight. what you dont want to do with refrigerated equipment is turn it on its side. the oil in the compressor can contain microbits of contamination. the oil travel with the gas on highpressure side and bring microbits with it . result is stopped up cap tube feed line to evapcoil. no fix. keep them upright always.

True. I am surprised it’s cooling.
The most important thing is to let it sit upright and still for at least 24 hrs after tipping it before you plug it in. This let's the oil drain back, and it should work just fine.

I love how honest you are about your cooking mistakes. My sister has always felt very overwhelmed by cooking, but by doing a food subscription service she's been trying recipes and building her courage. She likes watching channels like yours where people don't make a big deal out of mistakes. I keep telling her, "It's just food. It's not the Mona Lisa." And sometimes those mistakes can be repurposed into something else that is still pretty yummy!

I started using clear cups last year for my seedlings (Tomatoes, peppers, eggplants and squash) and this year also. My sisters love to drink their cold coffee from Mcdonalds or DDs so I just collected them and drilled holes in them. Watching the root growth is very interesting lol.

My grandparents had a large garden, about the size of yours, where they grew food for preserving. They also had a kitchen garden just outside the kitchen door where they grew things they needed for day-to-day cooking.
