    Great first cook. That XL is really nice. Be careful as to not heat it up to fast as it will crack.

    That looked great Gary nice first cook on the grill dome...not a big coffee fan but the wife is and I like your idea of adding more cocoa

    One of the many differences between California and Nebraska is that I had to drive all over town just to find Tri Tip. Trader Joe's was the only place that had it! Now I know what all the shoutin's about. The coffee rub looks amazing, Gary. gotta try it soon!

      Dan, California uses up most of the Tri-Tip, a slight advantage to living here... but not by much :-)

    Great cook Gary, and nice recovery from that incorrect probe temps.
    The combination of beef and coffee can't be beat in my opinion.

      Thanks Joe. The wireless thermometer was acting kinda goofy for sure. I have the new iGrill2 unit to try out now, so I am hoping for better results.

    This is indeed the week of the tri-tip which is my all time favorite cut of beef! I made one last week on the Weber. finished it with a honey, garlic, citrus glaze- yum! I love the coffee and brown sugar method- I'll try that next.

    you know I love your programs but could you explain what sort of meat it is for me and others who live in the uk and don't understand that much about it cheers

      Only two per cow and California eats something like 80% of all the tri-tip produced. Very popular in the Central Valley of California where I live. Fabulous flavor and very tender when cook correctly. Best done over a live wood fire in my opinion. We cook it like a seared roast, medium rare mostly and it is fabulous in a sandwich.     The Tri-Tip looked fantastic! It didn't look well done to me. Still looked like a nice medium or med-well? Anywho, I'd eat the crap out of that!!!! Nice looking rub too. It's hard to find tri-tip in Texas, but I will look for it. Thanks Gary! Troy in Texas

      It actually was a nice medium (IMHO) and we went through it very quickly. Made some awesome sandwiches as well!

    Just a suggestion. Sear the meat first on the stove top or on the side burner. But this looks delicious. And also try some cinnamon to the mix.

    Of course it was 150. You left it on too long. You should have seared at 115* taken off at 127* for a rare piece of cow. Who wants it at medium?

      Bill Turner Why would I want to eat it rare or medium rare? I have stated for years that I like my meat medium... it is a personal choice and I will not waste good food for the sake a satisfying those that will not be there to enjoy it with me.
