  • Kicking off our Zero KM Food experiment in March 2021. We are going to film one day a month where we eat only food from our garden or what we have swapped with people nearby. Fro example in todays video we use locally caught Tuna that was bottled this summer by Carlos cousin Peppe and olive oil that was made by Michele our neighbour in November.
    We often eat local food and rarely visit big supermarkets (only once so far this year) and I thought it would be fun to document the variety of meals we can make without going grocery shopping.
    This is not a recipe vlog, the food I am making here is NOT from any recipe book, it is just demonstrating that we can get by with what we produce ourselves.
    Vegetable Casserole:
    Borlotti beans - grown summer 2019 and frozen
    potatoes - grown summer 2020
    onions - summer 2020
    tuscan kale - in season
    broccoli - in season
    canned tomatoes - grown and preserved august 2020
    chilli pepper - autumn 2020
    olive oil - made november 2020 next door
    sage, rosemary from garden
    Nicoise Salad:
    romaine and frisee lettuce - in season
    eggs - from Molly, Polly and Tilly (our hens)
    Tuna - from cousin Peppe, caught in the bay here
    red peppers, green beans - summer 2020, frozen
    potatoes - summer 2020
    spring onion - in season
    dressing: lemon, windfall orange from the garden, oil from neighbour, salt, pepper

    I am a retired Chef and I understand how hard is to create video content, even more so when you have to create recipes from what you have in the garden (mystery bag - that's fun) but after the third video it can get challenging. great job! Say hi to the legendary Carlo -HELLO EVERYWHERE!!!!!

    GIRL!!! I actually AM a chef, and I have to say... all of that looked AMAZING! My mouth is watering at the thought of locally caught and bottled tuna. I love this challenge Nicki, it's a fantastic idea. It really gives you some insight about being self-sustaining and what wonderful meals can come from local ingredients.

    Nicki, you can use the jar of tomatoes still! The oil just solidified in the fridge. Olive oil does that. Once you take it out and it warms up to room temperature, it will return to it's normal color and consistency. inJOY your meals!

      @@NickiPositano I think the Garlic in the Pumpkin should be fine as you can preserve Garlic in Olive Oil so don't see why it should be any different adding it to something.

      @@katbar6066 agree. As long as the garlic is submerged, it’s going to be fine. The jars preparation should be like canning....
      I keep garlic in good olive oil for a good few months- topping it off a few times- using both oil and garlic 🧄

    I thought you did a great job; nevermind "what foods go together," you did just like they would have had to do in the "olden" times- work with what you have. Feeding the family was the priority, not worrying if it "went" together. I love your experiment. Keep up the good work. Those egg yolks were the brightest yellow I've ever seen.

      Over here, people say that a bright yellow yolk means the chicken is well fed and has a proper happy life outside, so the eggs are as healthy as they can be. ;)

    I just finished watching a very silly Netflix drama called THE ONE, which missed out on everything that makes one person special to another. You and Carlo came from such different worlds but what binds you together is not DNA but heart. I am so glad that you found each other.

    Something to remember: Every Italian dish started with a person who was creative. Everyone loved it and it became a classic. You may be developing a classic for the future...at least in your own family. Skye's grandchildren could make it and remember you.

    When I was growing up my Polish mom would make platski. Basically a potatoe pancake. Grate a few potatoes on the fine side of the grater, grate an onion, add an egg, and some flour not too much and mix it all up. Fry it up like pancakes. I used to sprinkle sugar but you don't have to. So easy to take to the beach!

    You are able to feed yourself, even if it isn't everything you want, you have what you need. You've given me something to think about and I've started a small vegetable garden because I'm learning from your channel and other channels too. I have to say though, I really like the approach you and your family have in the garden and appreciate you showing us. I learn all kinds of things you might think are common knowledge, but aren't, by watching. Thanks for taking us along!

      I gotta say those kale chips looked really good. I never thought about kale chips🤗and they’re so healthy. I use a lot of garlic in my cooking. Garlic thins out your blood making it easy for your heart to pump better...❤️

    I’m certain I would have been making cookies as well! One self sufficient pudding you could make could be a egg custard tart? And I think another option would be tuna and potato patties?

    I think it is important to realize where our food comes from and what we can do to buy and cook local ingredients. It is so much easier when the farmer’s markets open in the summer but our supermarkets are now labeling produce as local or not. Your meals looked fresh and appetizing - bravo!

      The life of us living beings is a continuous battle, in a war that we will eventually lose, but it is still an incredible gift that nature offers us, if we fight well, and we are at least a little lucky, we could say that it was worth it. .

    Oh sweet Nicki, you put way too much pressure on yourself, using one or two items from your garden and anything local like olive oil is more than enough. For me it's fun to see you and your family interacting it's a sweet time for you all, enjoy it and keep it simple & never lose chocolate, coffee , pasta or cheese.

    Hi Nicki, perhaps you can get Lucca to plant Cecchi (chick Peas) they can be ground into flour and you can add chilli and spices to coat all your veggies like cauliflower beans, broccoli, pumpkin etc. to make Pakorah ( the Indian deep-fried snack).     What you are doing is amazing! My grandmother grew up in the mountains of Kentucky. In the 1920s and 30s they ate from their garden everyday. On Sundays, they had meat - killed their own chicken or whatever. They also had cows and drank unpasteurized milk. When I asked her about bread, she said no way - we got that from a mill. So, local, but even they did that.

    Salad and soup look delicious. Don't worry about what other people think. Do what makes you happy. The oil in the tomatoes changes because it's refrigerated. If you let it come to room temp, the oil will soften. As far as the garlic with oil, when it's at room temp is when you may have botulism. If it's mixed together and in the refrig, it needs to be used within 7 days. Really enjoying these videos. Reminds me of our visit to Napoli, Sorrento and Positano 4 years ago.

    Hello, Nicki. You should invest in a vacuum sealer so your frozen produce will last a lot longer and you won’t have to worry about freezer burned food.

    Nicki, it all looked good enough to eat and the proof of the pudding is in the eating. Those eggs are so fresh, I have never seen yolks so yellow. Another great entry in the Positano Diary.

    Remember while your creation may not be a ‘classic” Italian dish, anything you make in Italy from locally produced items is Italian.
    Let me say that this personal challenge to create from what is available in your area is really creative and fun, also makes you stop and think what it was like for those long before us who had no other choice.
    One thought for a local ingredient for pasta, you have shown the chestnut trees, what about making chestnut flour for homemade pasta, could be an interesting challenge.
    Keep the videos coming, we are coming back in October, if things open up.

    Just love the idea of eating what you have on hand and not shipped in. The hens are my favorite, they are so plump and love those fresh eggs. My mother often made a dish with white beans and green beans with potato like a stew with chopped tomatoes, that all came from our garden. Thanks for sharing your meals with us.

      @@NickiPositano Incidentally there is a Chinese dish a friend from Northern China taught me that you could almost make with the ingredients you have, you're only missing tahini/sesame paste. Stir fry green beans and chopped tomatoes in a bit of oil. Boil some long wheat-based noodles (spaghetti or lingini works fine), when they are done (and still al dente), add them to the pan. Turn off the heat and stir in some sesame paste or tahini to taste. Also season to taste with salt/pepper. Top with some diced or sliced cucumber and scrambled egg. It's so simple and delicious... I think I will make this today! And I'm making Carlo's Mama's soup this week, from your earlier vlog.

    Hello Nicki and Carlo - thanks for sharing your lives with others. It is fun watching your videos. Stumbled upon your sight during lockdown in the US/Washington DC area. I studied in Rome for 5 years (20 years ago now) and went to Positano every year for a little break at the beach. I've been back a couple times since then but not back in about 10 years. Always stayed at the Pupetto Hotel which is around the walkway from the main part of town - but you probably know that - haha. It is so much fun watching your videos and adventures in the garden, on the beach, and around town. Stay safe and let us hope we can all travel again once life returns to somewhat normal. Thanks again for such wonderful videos of your life together. Help to pass the lockdowns and restrictions in a fun way. Ciao! Mark

    💛😇☝️. Also here is another idea. Polenta. Local product made from corn all over Italy. You can make it creamy make it like a corn bread sweeten it. Look into that. My grandmother from Naples made that many different ways. 😇💐😇💐

    Nicki, don't worry about the garlic. That applies more to leaving it on the counter in oil, where it can develop bacteria. I have jars of roasted Italian sweet red peppers and garlic in oil in my fridge that I've been eating since last summer, and I'm still here. 😁Also, the oil I put on top of the peppers looks just like the odd oil in your jar that you showed up; kind of granular and clumpy. It's fine; just how the cold temps affect the oil.

Here is an idea mozzarella must be handmade all around that area the flour is a must any dairy that is local like butter you cud make pie crust like pot pie all vegetables with creamy Parmesan sauce.       @@NickiPositano Ah, but making home made Mozzarella (and ricotta) is quite easy. The ricotta for sure can be local ingredients. If you can get the rennet and citric acid locally you can do it! Just something to consider.... meanwhile, enjoying your videos, thanks!

      Goats milk mozzarella isn't too bad! Bit stronger in taste tho. Or you could make chevre, seeing as you know some goats that recently had kids in your area.
      Edit: If you can forage Cardoon thistle from your local area you can use this as a rennet to make cheese with!

My wife and I have been traveling to Italy for over 40 years and have stayed in Positano several times and love it but now because of our age we will not come to Positano again but because of you and your TH-cam channel we can live through your eyes.     Such an enjoyable video Nicki. When you showed the bags of Caputo flours, I couldn't believe it! If I'm allowed to use the Caputo flour that I use to make my authentic Italian pasta and doughs here in Buffalo, NY, then you can certainly feel free to use them, too especially since they're made just down the road from you! 🙂 No reprisals here. 😁 dear friend.

    You could make ice cream. Local goat milk, honey, eggs, lavender, your homemade jam, etc. I think we use to call it "icebox ice cream" when I was a kid. Just mix up what you want in it and put in the freezer. Every half hour stir it up well until it's to stiff to stir then let it set a hour or so. Or how about tomato ice cream? It's really a thing.

      When we were growing up I remember putting sweet maraschino cherries 🍒 and little chunks of sweet pineapple 🍍 in our milk and added some evaporated milk too it too and freezing it ... that’s why we were always out of milk😂. Those were the good old days🤗

    I'm trying to eat locally - as much as possible. What I've done is made cupboard of all of the items (empty packages) that are made on Vancouver Island and the Gulf Islands, so nothing that needs to be imported from the mainland (Vancouver area) or anywhere else in Canada or around the world.
    It's interesting to see and learn what items are available locally.

    just had a thought... many foods are vacuum sealed! you can easily store them in a cool dry place out of light and enjoy months on. think that might be useful to look up! the salad and soup are a great meal! so beautiful! gusta!

    Re. garlic: Its my understanding garlic is safe as long as it is completely sound, no deterioration. I base that analysis based on garlic's use in giardinera relish (like what you were making there) as well as in fermented foods such as kimchi and pickles. I will also check out your other comments to see others' consensus on this.

    You did well considering your using preserves and minimal fresh food, It's good you can cobble together meals out of a variety of sources do the cooking and my wife would probably eat little of what you put into your food. It looks like a healthy diet so well done. Carlo is growing o me with his sense of humour.

    I've seen plenty of dishes on your channel that have made me hungry. :) Some thumbprint cookies (are they biscuits in Italy as well?) with jam filling maybe for dessert? Or something with walnuts from your trees, if you've any left. We've only been in our house a couple of years, but we're striving toward having as much food production in our garden as we can manage. Thank you for being an inspiration.

    Great video Nicki! I think more of us should pause our lives to figure out where our food comes from. Love the idea of eating what you grow. My grandparents lived that way. Had big garden with own beef, pork, and chickens. I have difficulty giving up the chocolate also. Need my Cadbury Easter Eggs :)

    Nicki don't beat yourself up🤗. You idea is great👍...
    Here are some ideas, as you seem to be stressed.. you could make potato bread🥔🍞 (savory) and potato cake (sweet).. typical in SW England ... My gran used to make it.. It was delicious!.. Or if you have corn 🌽on the cob (grown or local) you can make polenta or mais flour🌮 to cook flat breads with.
    You could make tuna/potato/ herb fish cakes with salad.. And tuna chilli🌶️ and make cauliflower rice🍚 to go with it. Also with potatoes🥔 you can make gnocchi and a sauce with veggies🍅 and or local fish🦑🦐. If there are local mushrooms🍄 you can make a mushroom sauce etc. You could make potato dumplings in a veggie hot pot. Also potato and fish soup.. My kids love that.. And it's filling!
    If they want something sweet.. You could grind down nuts from your garden with honey and fig and make protein balls (also you can add mashed beans eg like Chinese sweet treats, for more volume and as a binder).
    Also I used to make a carrot cake🥕🍰 for my son that required no flour (he was allergic to all grains) .. Just use eggs, carrot, nuts and eg honey to sweeten it.. Add some potato if you want "flour"
    Also brandy ginger snaps...with eg cream.... I made them with no flour.. Or with potato. Obviously you don't have to add ginger.. But actually ginger is easy to grow!... And no brandy.. But if there is a local alternative alcohol, put that in 😉(I left it out when making these for my son).
    Freeze blended local milk/yogurt with fruit and honey (or your jam) to make ice-cream or sorbet. 🍧🍨.. Sprinkle with chopped walnuts from your garden. I do this all the time with my kids... Just freeze the fruit and blend... Delicious (add local honey when blending if sour).
    You can also use potato (flour), egg 🥚and milk 🥛(local cow, sheep or goat) and make pancakes.. Then your homemade jams on them as topping.
    And so on!...the ideas as are endless!.. I think your "panic/worry" is blocking you from seeing the potential variety of things you can make as meals! (where you do not need grain flour!). I learnt all these substitutes/alternatives due to my sons grain allergies. 🤗
    I hope you see this... It's harder now you have so many subscribers and not our small

    I could tell this was possible when I was wandering around San Michele and kept seeing arugula growing out of cracks in the stairs. (Arugula is about $4 for a box that's maybe 2.5 cups where I live.) And I was thinking on that walk, if you knew what to look for, you could easily live off the land in the area even without your own garden. 🥰 I'm so jealous.
