Just found out first milkcaps of the year here in Scotland. I "think" they are false saffron milkcaps, but I'm not 100% sure. Other than the scrobiculations, are there any other defining features?
One of my wild edible mushrooms the saffron milkcap goes well with poultry and beef tastes similar to portabella mushrooms but it has more of a nutty and earthy flavor garlic and butter I have tried it with trout which goes well together
Tried these fried/stewed several times but really cant get past the texture, too mushy/chalky for my taste. Like an overipe apple. However, last time I put on the bbq till starting to crisp, much prefered the texture personally.
I know what you mean they can be quite granular. I find when you think they are fully cooked keep cooking for another 5 minutes or so and the grainy texture goes away
Not had the pleasure to try this personally yet but there is some USA experts here on pickling HEN OF THE WOODS Maitake and their recipes holds good for about 2 years stored! Apparently they are DELICIOUS! If you can locate either of the Saffron Milkcaps, you are on a WINNER and there really is nothing else like them. As long as they exude an orange liquid, which then turns GREEN (hence the staining on the caps in the video), then there is NOTHING else in UK that does that and they are not only perfectly safe but unarguably one of the most incredible taste sensations going. Seriously, get outhere and find them, you will NOT regret such plucking of courage up. You really cannot go wrong on this species. Go one species at a time, to build your confidence but there are NO dangerous lookalikes to these, as that orange/green milk is unmistakable. Happy SAFE hunting for these. You wont regret it.

Yeah I pickle mushrooms sometimes, I like pickled scarlet elf cups. But I generally prefer cooked or dried mushrooms
