Yes that’s correct. If you want to try a white fish or raw chicken breast that’s great, but you’ll want some kind of protein to bind the crepes and create the noodle texture. 👍🏼

We've been using that exact same Aldi deli chicken cut into thin strips to make chicken-fettuccine alfredo (like, the chicken IS the fettuccine). It's been scratching my pasta itch whenever I get one. Great minds! Can't wait to try making my own "pasta" with shrimp!

These were all pretty cool. I don’t really like Egglife wraps though. In the filling I use ricotta, parmigiana cheese, mozzarella, salt, pepper, parsley, egg, and my grandma always used mint! That makes it!
many years ago my Ex was on the Atkins diet & I found a recipe to make chicken enchilada's & I used turkey breast for the shell, even my kids Loved it.. I prefer cheese enchilada's, I might have to try one of these recipes for a cheese enchilada :)
This has a much higher amount of eggs and protein so they hold together pretty well. You can always add a little extra egg white powder too if you’d like to make sure. 😊

Thanks so much! I can't speak for Chris, but I know the Egglife Wraps don't freeze well at all. I think the Chicken Breast version of mine would do fine, but I haven't tried freezing it. We eat it too quick! My sauce freezes great. That's why I do a huge batch! I freeze a ton of it, but if you use a jarred one, I think it would do fine also 😋
Thank you! For mine you can absolutely make it ahead, place in a casserole dish, and freeze. Then when you want to have dinner you cab pull it out and bake it from frozen at 325 for about 60 minutes and then at 375 until browned and bubbly in the center. Or you can thaw it in the fridge and then bake from fridge as normal. 😊👍🏼
I made 4x6 lasagna style sheet pasta from my last batch of your shrimpy noodle mixture and tucked them in the freezer for later use - I bet I could roll those around some yummy ricotta sausage stuffing for a bit of a stiffer/firmer manicotti (less crepe-y) version?
Yum. GOTTA MAKE THIS carnivore style. I absolutely hate egg life wraps. They taste like cardboard. Basil in a tiny package lol. Grow your own! It grows like crazy from seed and gets huge and you can continue to cut it for 8 months where I am.
I always grow my own starting in April. Even though it's not that cold here in South Carolina, the basil won't grow until then. I usually grow three different types. Chris's Noodle recipe would definitely be tastier than the egg white wraps, but with all the sauce I use with mine, whenever I use them, it's just a vessel or a pasta. Thanks for watching! 🙏🏼

I grow enough to fill the freezer with home made pesto and also fill lots of ice cube trays (basil/olive oil) then put in bags through the months it doesnt grow and combine that with parsley for more pesto. 😀

I wish we could get some more recipes with no cheese great job though , i’m trying to convince my son to go carnivore and he loves cheese. So I have the ingredients to make the mac & cheese so next time he visits I’m definitely going to try it out however I really would like some more recipes. I don’t have dairy. Love you lots. Every time I drive by the one here, the parking lot is full. It's packed every night! Pretty much every restaurant here is... We go out very rarely. Don't know people do it!
Teated this today and really good got my batter to loose first to the pasta so should added more egg white powder but did a new one and that worked so easy to turn in the pan so i learn from that and i added little to much Cheese on top but best are that you learn from it and do it better from trying.
Protein blended into a mix like this as a binder is a common cooking technique in Asian cooking (like fish cakes for example). The protein gets cooked and becomes rubbery, hence the chewy texture that’s more like a noodle. Without it, this is just eggs and will be the texture of an omelette.
How much does it add to the flavor? Haven't had a chance to make it yet, but by the quantity, I imagine you can barely taste it, if at all. You know, if people don't like shrimp, but aren't allergic...
If you didn’t tell someone it was in there I don’t think anyone in the world would know. Being cooked and overcooked makes the mild flavor of small shrimp dissipate that much more to the point you can’t tell it’s in there. 😊👍🏼
Protein is used in batters as a binder in Asian cooking. By being cooked more this protein becomes bouncy and gives this the texture it has. Without that you’re making an omelette.
Question for you, Chris: When you measure your egg white powder, do you simply measure it out by the tablespoon (i.e., by volume), or do you weigh it? I made your Mac and cheese recipe, and I am in the habit of weighing all my ingredients. However, I think by doing so that I may have added more egg white powder to the recipe than you might have. The texture was not all I had hoped for; I think that I ended up with more powder than I would have had I simply measured it and that may have made the texture a bit grainier. Wanted to ask you before I try again. (The shrimp works beautifully, by the way.)
Hey there! Yes I measure by volume and I tend to lean more to the “less is more” side and only add more to recipes if it won’t hold together. I learned in my bakery days to not compress flour when measuring and then eventually covered that into weight, but I rarely took other recipes with volume measurements and converted that to weight according to the written conversion charts because I always found it to be inaccurate. I’d suggest reducing it and seeing if that helps you. 😊👍🏼

I thought that such was the case-watching you (and knowing that you are an experienced chef), I have noticed that a lot of what you do seems intuitive. I’m sure you know what I’m about to say already, but for a lot of keto baking (for those of us who are not carnivore (yet)), using volume measurements can lead to disaster for many recipes, or, at best, very inconsistent results. There are some popular flour mixtures that would not work without using weights. Now that I know to use volumes in your recipes, hopefully I will be able to do a little better next time! (My mac and cheese was rather chewier than I thought it should be.) Thanks again! :)
I wonder if the crapes would work like a flour tortilla? Husband loves to take wraps to work for lunch. Right now he uses the keto tortillas. I know those things are not goods and pretty pricey. So, I am looking for something that would work, something more carnivore.
Hey Chris I asked yesterday about whether we could use egglife wraps just like the southern keto guy did and still be carnivore… I have a follow up question sir…. I know you put very thin sliced chicken cold cuts for the outer wrap for the carnivore version … but what if you have an aversion to chicken cold cuts.. what could we use besides that to wrap the manicotti in? Could we use your noodle recipe? I’m desperate I want the manicotti but I can’t get past the chicken
Hey there! So Victor at Southern Keto uses the chicken for his second version of the keto manicotti. My carnivore manicotti uses the carnivore noodle recipe from the beginning of the video and has no chicken. 😊👍🏼
You can definitely use Chris's noodles to wrap them in. My recipe wouldn't be carnivore because of the tomato sauce, but it is keto. Instead of chicken, you could use thin sliced roast beef or turkey as well. If you're using sauce, you won't taste the chicken. It's just used to hold the manicotta together and add a little extra protein... To me, EggLife wraps would be carnivore enough. It just depends on how strict you are. It has Xanthan Gum and a preservative. It's 99% egg white. If that's good enough, go for it. I wouldn't have a problem with it at all, but it's not 100% animal product.
Hey there! I would suggest raw chicken breast. Cooked chicken can be quite stringy and get dry and crumbly if cooked further. Raw should work just fine though. Just chop it small and let the blender run to get it really smooth. 😊👍🏼

Have you seen the smoked shotgun shells using regular manicotti noodles? Do you think you could do somthing similar with this crepe/shell? I'm thinking they may not stand up to the bacon grease....but I haven't made your version, so maybe they are sturdier than I think. These look ridiculous, by the way!
Hi Chris. Trucker wife here again. With this manicotti can I make the entire thing - cook completely - then cover & freeze? When needed then place in oven & heat. Would it take any flavor away by freezing it for 5 days? Thx

Chris, i used this recipe for lasagna sheets. My pasta sheets had a definite fishy smell. I rinse the shrimp over and over but still the smell in the final product. What do you do to prevent this?

Thanks so much! I can't speak for Chris, but I know the Egglife Wraps don't freeze well at all. I think the Chicken Breast version of mine would do fine, but I haven't tried freezing it. We eat it too quick! My sauce freezes great. That's why I do a huge batch! I freeze a ton of it, but if you use a jarred one, I think it would do fine also 😋
Thank you! For mine you can absolutely make it ahead, place in a casserole dish, and freeze. Then when you want to have dinner you cab pull it out and bake it from frozen at 325 for about 60 minutes and then at 375 until browned and bubbly in the center. Or you can thaw it in the fridge and then bake from fridge as normal. 😊👍🏼
I made 4x6 lasagna style sheet pasta from my last batch of your shrimpy noodle mixture and tucked them in the freezer for later use - I bet I could roll those around some yummy ricotta sausage stuffing for a bit of a stiffer/firmer manicotti (less crepe-y) version?

Yum. GOTTA MAKE THIS carnivore style. I absolutely hate egg life wraps. They taste like cardboard. Basil in a tiny package lol. Grow your own! It grows like crazy from seed and gets huge and you can continue to cut it for 8 months where I am.

I always grow my own starting in April. Even though it's not that cold here in South Carolina, the basil won't grow until then. I usually grow three different types. Chris's Noodle recipe would definitely be tastier than the egg white wraps, but with all the sauce I use with mine, whenever I use them, it's just a vessel or a pasta. Thanks for watching! 🙏🏼

I grow enough to fill the freezer with home made pesto and also fill lots of ice cube trays (basil/olive oil) then put in bags through the months it doesnt grow and combine that with parsley for more pesto. 😀

Teated this today and really good got my batter to loose first to the pasta so should added more egg white powder but did a new one and that worked so easy to turn in the pan so i learn from that and i added little to much Cheese on top but best are that you learn from it and do it better from trying.

Protein blended into a mix like this as a binder is a common cooking technique in Asian cooking (like fish cakes for example). The protein gets cooked and becomes rubbery, hence the chewy texture that’s more like a noodle. Without it, this is just eggs and will be the texture of an omelette.

If you didn’t tell someone it was in there I don’t think anyone in the world would know. Being cooked and overcooked makes the mild flavor of small shrimp dissipate that much more to the point you can’t tell it’s in there. 😊👍🏼

You can certainly try. You’ll probably get a much thicker and eggier result that way.
Question, why why do we need the shrimp or the fish chicken like what does that do?
Protein is used in batters as a binder in Asian cooking. By being cooked more this protein becomes bouncy and gives this the texture it has. Without that you’re making an omelette.

Question for you, Chris: When you measure your egg white powder, do you simply measure it out by the tablespoon (i.e., by volume), or do you weigh it? I made your Mac and cheese recipe, and I am in the habit of weighing all my ingredients. However, I think by doing so that I may have added more egg white powder to the recipe than you might have. The texture was not all I had hoped for; I think that I ended up with more powder than I would have had I simply measured it and that may have made the texture a bit grainier. Wanted to ask you before I try again. (The shrimp works beautifully, by the way.)
Hey there! Yes I measure by volume and I tend to lean more to the “less is more” side and only add more to recipes if it won’t hold together. I learned in my bakery days to not compress flour when measuring and then eventually covered that into weight, but I rarely took other recipes with volume measurements and converted that to weight according to the written conversion charts because I always found it to be inaccurate. I’d suggest reducing it and seeing if that helps you. 😊👍🏼

I thought that such was the case-watching you (and knowing that you are an experienced chef), I have noticed that a lot of what you do seems intuitive. I’m sure you know what I’m about to say already, but for a lot of keto baking (for those of us who are not carnivore (yet)), using volume measurements can lead to disaster for many recipes, or, at best, very inconsistent results. There are some popular flour mixtures that would not work without using weights. Now that I know to use volumes in your recipes, hopefully I will be able to do a little better next time! (My mac and cheese was rather chewier than I thought it should be.) Thanks again! :)

Hey Chris I asked yesterday about whether we could use egglife wraps just like the southern keto guy did and still be carnivore… I have a follow up question sir…. I know you put very thin sliced chicken cold cuts for the outer wrap for the carnivore version … but what if you have an aversion to chicken cold cuts.. what could we use besides that to wrap the manicotti in? Could we use your noodle recipe? I’m desperate I want the manicotti but I can’t get past the chicken
Hey there! So Victor at Southern Keto uses the chicken for his second version of the keto manicotti. My carnivore manicotti uses the carnivore noodle recipe from the beginning of the video and has no chicken. 😊👍🏼
You can definitely use Chris's noodles to wrap them in. My recipe wouldn't be carnivore because of the tomato sauce, but it is keto. Instead of chicken, you could use thin sliced roast beef or turkey as well. If you're using sauce, you won't taste the chicken. It's just used to hold the manicotta together and add a little extra protein... To me, EggLife wraps would be carnivore enough. It just depends on how strict you are. It has Xanthan Gum and a preservative. It's 99% egg white. If that's good enough, go for it. I wouldn't have a problem with it at all, but it's not 100% animal product.

Hey there! I would suggest raw chicken breast. Cooked chicken can be quite stringy and get dry and crumbly if cooked further. Raw should work just fine though. Just chop it small and let the blender run to get it really smooth. 😊👍🏼

Have you seen the smoked shotgun shells using regular manicotti noodles? Do you think you could do somthing similar with this crepe/shell? I'm thinking they may not stand up to the bacon grease....but I haven't made your version, so maybe they are sturdier than I think. These look ridiculous, by the way!

Chris, i used this recipe for lasagna sheets. My pasta sheets had a definite fishy smell. I rinse the shrimp over and over but still the smell in the final product. What do you do to prevent this?
Hey there. This depends on the kind of shrimp you use. If they’re strong smelling or flavored the pasta will be too. Usually the smaller the better.
