I’ve made this several times as it is a favorite for us and not that hard to prepare. Ei roast cherry or grape tomatoes with olive oil and s/p in the oven in place of sun-dried tomatoes and sometimes substitute chopped kale for the spinach. So good! Love your videos and recipes!

This was fab! Cut chicken smaller for saute but will do as you said, and cut smaller once filets are cooked...didn't hear that suggestion til later.. Even kept leftover dregs of sauce to use elsewhere! 😋

Great recipe, thank you. If I may, one suggestion: pull the chicken at 155, it will easily continue to cook to 160-165 while it rests and reheats with the sauce. This will help to ensure the chicken stays super juicy.

Just made this recipe and it was REALLY GOOD! The only modifications I made were: 1 cup of cheese blend, Asiago, Parm from TJs (instead of 1/2 c parm). And 3/4 c sun dried tomato (also from TJs) instead of 1/4 c. I probably cut up 5 cloves of garlic instead of 3, but did not use garlic powder. The sauce has a wonderful sweet/salty flavor. Small children love it. For us keto folks, I just served it with a butter lettuce salad.
