Easy Home Made Burgers | Tasty British Barbecue

- With summer on the way, if you're anything like me you'll be thinking about barbecue, so what better time to learn how you can make some delicious home-made burgers?
These are on a whole other level to the ready-made burgers you can buy and are often cheaper too - what's not to like?

Recipe:
For the burgers:
Take 500g, just over 1lb good quality minced beef, straight from the fridge
Add 10g salt and a generous amount of freshly-ground black pepper
Optionally, add a good pinch of garlic granules
Working quickly, toss the seasonings through the meat
Divide into four even-sized portions, and form into tight balls, squeezing to ensure no trapped air
Place each ball on a sheet of plastic wrap, fold over and squash to your desired thickness
Dock all over with a fork, then wrap up individually and place in the fridge for half an hour to an hour
When fully chilled, cook over a high heat, turning once or twice until well browned. I always recommend cooking mince until no pink meat remains, but you do you.
Weather permitting, for best results cook on the barbecue, otherwise in a wide pan (I recommend cast-iron).
After the last turn, add cheese of your choice to melt slightly, then rest the whole thing for a few minutes before building your burgers!
For the relish:
Finely chop 3 regular-sized pickled gherkins, or cucumbers
Deseed (optional) and finely chop 1 medium chilli
Add ½ tsp caster sugar
Add a good pinch of onion salt, or regular salt If preferred
Add 1 tbsp American hot-dog mustard
Stir, then add enough mayo to bring it to the desired consistency - not too thin, or you’ll have a messy burger-eating experience!
(Optional) Add ¼ tsp MSG
Stir to fully combine, then cover and refrigerate until ready to use!
