British Classic Beef Stew - When You Don't Feel Like (much) Cooking!
Make this great, hands-off slow-cooked beef stew whenever you need a Sunday lunch but you don't want to be cooking all day!

Knorr stock pots (US): amzn.to/4b6S6w9

Ingredients:
500g good quality stewing beef - shin is great, skirt works well
250g chanteney carrots
1 large onion
seven or eight shallots
1tsp tomato puree
1 vegetable stock-pot (I used Knorr)
1 beef stock cube (I used Oxo)
Worcester sauce
Hendersons relish
Salt & pepper
1.5dsp cornflour
Method:
Season the beef well with salt and pepper
Add a little oil and toss to coat evenly
In a multi-cooker or pan over high heat, brown the beef, 4-5mins
Add tomato puree and stir through, cook 2mins
Add several good glugs of Worcester sauce & Henderson's
Stir, and allow to continue cooking until glazed, about 2mins
Halve, peel and chop the onion into rough half-moons
Add to the pan and stir, cook 2mins
Peel the shallots (I top and tail them, see video)
Add to the pan, along with the carrots, and stir
Cook 1min
Add vegetable stock cube and hot water until the meat and veg is just covered.
Switch to slow-cooker, and cook on high for six hours.
Once done, ladle out most of the gravy into a pan.
Bring to a gentle boil.
Make a cornflour slurry with a little water, and gradually add to the gravy, stirring all the time and allowing to thicken.
You want the consistency to be slightly too thick - so that when recombined with the remaining stew it will be the right consistency.
Once thickened to your liking, gently recombine the gravy with the stew.
Season to taste, and adjust as desired.
Serve hot, with potatoes of your choice and some iron-rich greens!

      Stock Pots come in various flavors and were famously promoted by Marco Pierre White, who got a lot of ribbing about using a convenience product instead of a traditionally produced stock. I was interested in them because they are individually portioned and would take up less room in fridge and pantry than other commercial stocks. Haven't found them on the shelves of any of the groceries near me, however.

    I use Bisto gravy granules or McDougall's instant thickening granules to thicken gravy.

    There is absolutely no reason not to cook russets in water if you are making mashed potatoes. The only times that I have wound up with grainy russets is when I have gotten impatient and pulled them before they were ready. Over the years, I have found that Yukon Golds are definitely the way to go for thing's like shepherd's pie. At any rate, red potatoes are in the "waxy" category of potatoland and are far more likely to be grainy than russets. I have never heard about Henderson's Liquor but I am going to check it out. I live in Florida, so I'm guessing that it'll be an internet thing. I'm guessing that it must be a remnant of your naval tradition, but you Brits are kings of shelf stable flavouring sauces. All we Amis have is Tabasco sauce and mushroom ketchup, but that might be enough, because a lot of your naval tradition is also our naval tradition. By the way, I love the way that you pronounce your "H"s and "O"s. Just stay away from Professor Higgins.

    To take mash all the way up to 11, pop the mash into a baking dish of some kind, use a fork to form and shape it into a cake, then pop it under a hot grill until the top is all brown and crispy. Looks and tastes great. Yum.

    You know, in the states a lot of people would use instant potatoes if they are of limited means. The government food programs and food banks hand out a ton of the stuff. On its own its nasty, but with some butter and paprika on top of canned corn and some ground meat ( usually beef) its not bad. Serve it with a good soy sauce or Worcestershire sauce and you are good to go.

      It’s 1:1:1 by volume milk eggs and flour, so it depends on the eggs. Use a method like I do in the video to measure them out, or the same volume in a measuring jug if you want to cut down on washing up 🙂

    Dont know if it was the hp sauce or the relish sauce but it Tasted abit too sweet for me. Prob too many carrots also. Will adjust for next time.

      The relish does sweeten a bit when cooked and the carrots add sweetness too as you say. But it gives you a base to adjust for next time 🤩

    Making this again today, it has become a monthly ritual in our house. I am grating the carrots otherwise my son will not eat them. This is hands down the best recipe I have made by far.

    Hi Ross , great recipe that I'd love to try . I have all the ingredients but have no tarragon . Is there an alternative I could use , or can I just leave it out ? Many thanks . Love your videos .

      Hi! 🙂 the tarragon definitely adds to the dish, but it will still be amazing without it 🙂. If you have some chervil or fennel either of those would be great substitutes, but if you don’t have them just go ahead and leave it out, it’ll still be a great dish 😋 Thanks for the kind comments, hope you enjoy the recipe 🥳

    Never heard of smoked garlic, but I am willing to give it a try. I have a small smoker. Do you think 30 minutes would work, or is that too much?
