    Today I'm going to show you how to make egg muffins.
    These healthy egg muffins are such a great protein packed breakfast and perfect for making ahead.
    Loaded with veggies, bacon and cheddar cheese they make a delicious and filling simple meal.

    EGG MUFFIN RECIPE
    (makes 12 muffins)
    Ingredients:
    8 eggs
    1 cup cottage cheese
    1 cup red bell pepper, finely chopped
    1 cup green onions, finely chopped
    1/2 cup ground oats
    1 tsp baking powder
    1/2 cup bacon, finely chopped
    1 tsp salt
    1/4 tsp black pepper
    NUTRITIONAL INFO (per muffin):
    103 calories, fat 5.3g, carb 5.2g, protein 8.6g
    Preparation:
    In a large bowl, beat the eggs, adding salt and freshly ground black pepper. Beat the eggs well, to get lots of air into the mixture.
    Next, add the cottage cheese and mix to combine.
    Stir the oats and baking powder into the mixture.
    This step is optional, if you want your egg muffins to puff up a bit more, feel free to skip if you're trying to eat less carbs.
    Add the bell pepper, green onions and bacon, and give it a final mix.
    Grease your muffin tin with butter, to prevent sticking. This is not necessary if using silicone muffin molds.
    Pour the egg mixture into the muffin holes.
    Sprinkle with grated cheddar cheese.
    Bake at 375 degrees for 20 minutes, or until egg muffins are cooked through and start to brown.
    Let it cool a bit, and they're ready to serve.
    Enjoy!

    I make these almost every week, just with a different mix of veggies (I skip the bacon), but always with a couple cloves of fresh garlic. I just wanted to say that I decided to make them in two square pans today (lined with greased foil is a must), and I dropped the baking powder to half a teaspoon. Sooooo good! I love the creamy texture! You can't lose with this recipe. I cooked two stalks of celery and finely chopped some radishes from the garden this time with a jalapeno, parsley, and chopped spinach and kale. Stupid good! Love this and so many of your recipes!

      Wow, what a brilliant idea of making it in your square pans, for how long you baked these to have it still creamy? Tell me about the garlic, do you previously fry it up a bit? There's a lot of room to play with this recipe, that's for sure.

      @@HowToCookSmarter Yes, I sauteed all of the vegetables to cook the bitterness out of the radish and cut the crunch on all of the veggies. I didn't actually time the baking because I was doing something else at the same time. I just checked for the center to be set. I'll guess maybe half hour under convection. Yes, it was still very creamy. Thanks again for your recipe. My whole family loves it! It's so versatile!

    We are vegetarians and I just made your wonderful muffins using finely chopped red onion, chestnut mushrooms, yellow pepper, cooked new potatoes and fresh parsley. They were fantastic and are now our new favourite breakfast. We don't normally like cottage cheese but you were absolutely correct in saying that you wouldn't notice it. Many thanks indeed, Sasha.

    This recipe was very tasty, but I subbed yogurt for cottage cheese because that's what I had, and, just so others know, the substitution makes the muffins way too light to include leavening. If I make these again, I'd skip leavening if I don't have cottage cheese, and I'd likely up the oats to a 1/3c too. They also stuck to my muffin cups terribly with my substitution, so I'm glad I used muffin tin liners.
    I used no meat, but a little chopped jalapeno, a couple chopped radishes, a couple handfuls of chopped baby kale and spinach, a chopped stalk of celery, and the green onions, plus some garlic powder, no cheddar since I forgot. I would saute the crunchy vegetables in the future, as, despite being finely chopped, they remained pleasantly crunchy to me, but maybe not to my toddler. We'll see. Great recipe! Very quick and easy.

      Hi there! So glad you enjoyed this recipe, even though some things didn't really end up as expected. I think subbing the cottage cheese with yogurt was the good move, but I agree you should increase the amount of oats, because of the extra part of water. that came with the yogurt. Yeah, liners are always a better option, but I had only some cheap that stick like a dry pan:) As you can see, there's so many options with these egg muffins, many different vegetables go so well with the eggs in this muffin form, I'm thinking about the asparagus, cause they're in the season now.

      Hi Marcelle, thanks for stopping! Egg muffins are such a great breakfast option, right? I think you'll love these even if you don't prefer using cottage cheese, because it melts nicely inside the muffins, and make them really moist, even the day or two after. Also I love the addition of ground oats (or any flour you prefer), not too much of it, it lifts up the muffin and makes a great texture in the end. So glad you like the video!

    I made this recipe without baking powder and yeap they sure sunk but wow they were sooo yummy! I was abit disappointed in the way it stuck to my tin cause I guess I didnt grease it enough so gotta work on that. But either than that thanks for this easy recipe ! 😁

      Thanks a lot for all those kind words, I appreciate it so much! Adding cottage cheese into the egg muffins was a game changer for me, now I know I'm eating the muffin, earlier with eggs only it was like eating egg omelette, nothing more than that. Bacon, broccoli-spinach, yummy, love your combo. I was just fine with adding the bacon without getting it crispy before, I believe it also added to the soft texture too. Have a great weekend!

    I made these and they're delicious 😋! I greased my pan lightly, put cupcake liners in and pan sprayed them. I was able to peel the liner off one handed quite easily.

      Update: I went ahead and added about a half cup medium grind corn meal to the recipe instead of the oats. Came out great! These egg muffins popped right out of my silicone pan. I used seasoned steak bits, chopped bell and jalapeno peppers, half cottage cheese/half full fat Greek yogurt (that’s what I had available), and sharp white cheddar as my add-ins. This recipe, as mentioned by others, is a great framework for many variations. Will use again - thank you!

    Another great recipe! Awesome that you add all the veg! I really like the oat flour to make them rise more! Thank you for the extra greasing of the pan! I will so make these muffins! These are great for all the people on the keto diet too! 😊🌷🌼

      Thanks friend, I'm so glad you like these egg muffins! Yeah, this recipe works for most of the diets. While doing my research I was thinking to make it 100% keto, you know with just eggs and veggies, but hey I put oats in everything, so I thought why not adding it into the muffins to lift the batter a bit. I thinks it's way better than omelette sort of muffins, and still they're healthy.

      I haven’t, but that’s a really good idea I think. Certainly instead of the oats. Because you want to keep the baking powder to help them rise a bit.

      @@HowToCookSmarter i think millet is a great substitute its full in nutriments and gluten free. Less peaple know about this treasur. I use it in many dish but not yet for bread. Sorry about my bad english. Toking english is a big issue for french peaple 😥😥😥

    Just made these myself and I have to say, they are DELICIOUS. I’m not sure you can call anything with bacon and cheese in it “healthy” but it’s certainly a nice way to start the day! And you’d never know there was cottage cheese in there - believe me.

      there really are no unhealthy foods its all about calories
      nothing wrong with eggs, i eat 6 eggs everyday and im lean and muscular and healthier than i've ever been if youre that concerned eat turkey bacon
