I made7 qts of this enchilada sauce today. I saved extra for us to eat enchiladas tonight. The sauce is delicious! It siphoned pretty bad, though, so it doesn’t look pretty in the jars. That disappoints me greatly. We will enjoy it despite how it looks! Thanks for the recipe!
I have this in the canner now. I got pre-roasted anahiems and poblanos from the farmer market to speed things up. Left out any thickener, will add it when we open the jars. Had some of the leftovers with rice and toast. Everyone who got a taste loved it so this will be a staple from now on . Thanks for the fresh ideas and yes on doing a video on the Mexican potato soup, wife heard that and wants to have that one night.
I made wet burritos last night for dinner. I used the red sauce. I need to make more salsa verde. When I run into a good deal at our produce market, I use the grill. win win, after they come off the grill, its still hot enough to smoke something. We have a charcoal grill. I try to make extras for lunches.
I’ve got the roasted salsa verde going right now! All are roasting at the moment. It’s my first time to work with tomatillos and first for making salsa verde Smells great!!
Thanks to you and your meal in jars, I started making recipe very similar to this called Denver green chili, I just add pork butt and few tomatoes, I just thicken when I open it. So good❤

Don't forget to remind people that the longer roasted green chilies are in the freezer, the hotter they'll get. Even mild's can end up with quite a kick over time. I like to add some dried green chili powder to my soup/sauce/gravy for an added level of flavor. Yum
Oh wow, would love this. Here is my question. Could I use already canned hatch peppers, chili peppers. Hatch is already chopped or should I use I in chopped. I could wait until fall for the Anaheim peppers.
Perfect timing! I have about 6 Anaheim pepper seedlings that I’ve started and are growing great. Hopefully I will get a good harvest from them in the late summer. I envision roasting them over an open fire in our back yard fire pit and then I will use them in the recipe you shared with us. This looks great! Thanks Jeni!
Oh that looks good. Wish we could buy the peppers like that, if you don't mind me asking how do they charge for that? I also do my peppers on the grill, have a red pepper tomato pizza sauce I can, do all on the grill and add a little wood smoke chips to enhance the flavor, peel skins (which I hate doing, takes forever) and finish in pot on stove. Looks like a winner with nice instructions. I bet it was good, don't you just love it when you have enough left that won't fit in a jar so you have some to sample.
@@Jeni_Gough It is, if you have the canning book, Better Homes and Gardens Can It, (2012 by Meredith Corp.) it is on page 63. I roast the tom., peppers, and garlic on grill with hickory wood chips to enhance flavor. I bet you would like it, if you don't and want recipe I can send it.

I've been canning many many years and it was the first time I've had issues. Just wanted to share that. Thanks for all your inspiration!

I just canned this recipe. The ball lids I am using up did ok on all but 1 jar. The button didn't pop down and when I did the test of lifting jar by holding onto lid, it stayed sealed. Is it possible this jar is ok? This has happened 1 other time on Ball lids.
No! Never push the button, it creates a false seal and you are at risk for botulism growth. That one should be put into the freezer, if it’s been a week, dump it. Sorry. When canning, all lid failures should just be frozen. 😊

You mentioned using it for a soup base. I love green chili and chicken soup. Do you think it could be canned with chicken in it? Would I have to cook the chicken first or could I do a few raw pieces and just put in a bit less liquid to account for the juices that come out of the chicken? Thanks!

Yes, you can put in raw chicken, but I did include a link for my pork green chili, that will work better with the amounts and same flavor. 😊
How much Clear Gel do I use?
About 1/4 to 1/2 cup. Just make sure it’s not too thick, it needs to be a little thinner than gravy.
Can you use clear gel to thicken for canning?
