can't wait to try. I use a 6c measuring glass container to dip into my sauce to pour in jars. A little messy but I keep a potholder under it as I'm bringing the sauce over ... fast. I get nervous when jars are 🔥. Gotta look for the recipe now. :)
I finally made this yesterday. Man, the flavor of the broth is incredible. Your instructions for the broth was perfect for my tastes, although I did use only 2 jalapeños instead of 4. Made 7 quarts, 1 didn’t seal, guess what I’m having for dinner tonight? Thanks for the great recipe, Jeni ❤

Ok 12 quarts in my canners. Did it with a turkey instead since I'm trying to clean out my freezer to make room for beef in September. I'm sure it will be good!
my daughter and i love this, she also wanted this sauce on hamburger for tacos, so I canned 8 pints, it is delicious, we still haven't made it to the roux and heavy cream part---maybe today, ,lol

@@Jeni_Gough There is a teriyaki chicken recipe that makes a batch broth like that in one of my amish canning cook books and uses 1/2 cup of sure gel per batch and it comes out like take- out teriyaki, no roux required. Just an amazing silky finish. I know we think of sure gel as an apple pie solution but I think it has more applications in savory cooking than sweet.
They are two completely different plants. "regular" oregano is Italian and is sweeter with a slight licorice undertone. Mexican oregano is more fruity. Taco seasoning would not taste like taco seasoning if you left it out, its very important for the flavor. These two are not interchangeable. 😊

You my dear, appeal to my cooking skills. I love to can but I am canning for 2 and dividing up a recipe is not a problem but the time it should cook is, that is where I have a problem. To get something canned with appealing taste is what I am looking for too. Not just some chicken in water and pale like hell HA! My stomach is difficult with the heartburn as I get older….so I try to stay away from jalapenos……but I do try to put a little zip in my cooking with a tad of cayenne….
Always always ALWAYS buckle your lid before turning the stove on. All it takes is one crying kid or a phone ringing and you could get distracted and not be able to get it buckled in time. ... making the lid a dangerous projectile. But i LOVE this recipe. Going to find mexican organo tonight so i can make this!!

Yes the chicken is raw. No on the chicken evgolomono. That soup is is chicken, broth with egg and lemon juice. That one is better to make with plain canned chicken. It is a great soup though, I love it! Pressure canning is a game changer for your pantry! 😊
@@SuperLauramack if your rings are to tight, the lids will buckle, get a crease and will not seal. Just bring your canner up slowly, make sure there is not a hard hiss when removing your weight, when it comes down, unlock lid but leave in place 15 minutes, then open lid halfway and leave another 15 minutes. Hopefully that will help. 😊
@@Jeni_Gough they don't buckle, but just I never have totally clear water. I end up with good head space, it's just the water is yuck. I do bring it up slowly . .. I have a Presto 23 quart. I wonder if I switched to an All American canner if that would help. I want to get the one holding 14 quarts.

I’m probably extra sensitive. For example the mild salsa that you buy at the store is my limit and I can’t have to much. I’m a wimp lol

What is the difference between Mexican and regular oregano ? And would it make a big difference in flavor, if that's what I have?

You add whatever protein you want to any of these recipes. It's all the same processing time unless you change the protein to fish. 😊

Yw! I use chicken and tomato bouillon in lots of stuff! Mexican rice, soup, canning, pasta.... I will have to bring out my tomato bouillon more! 😊
