Ingredients and Measurements:
2 tbsp. oil
12 lb turkey wings/neck (6 pounds wings/6 pounds necks)
2 tbsp. dried onion flakes (OPTIONAL)
2 tsp. garlic powder
1 tsp. black pepper
6-8 sprigs of thyme
8 small wiri wiri peppers (use more or less to taste)
10-12 Soogrim's cloves
1 stick Soogrim's Ceylon cinnamon (use 2 sticks if not using Soogrim's)
3/4 of a 14 oz. bottle of Soogrim's casareep (adjust for different brands or your color preference)
3 tbsp sugar (use more or less depending on your liking)
water to cover (keep adding until meat is tender)

Yes you prep it the same way. You can brown the meat and strain all of the fat from it. Same method though

Real Pepper pot is only made with beef and or pork also cow tongue. It's just not the same with turkey. But to each his own. 😃

Amerindian pepper pot only takes meat, cassareep cinnamon and cloves after it's finished sugar is added to balance the flavor That's authentic pepper pot.
You can definitely make it like that. This is how we like it

This pepperpot has no color. You need to buy the real cassareep not burnt sugar cassareep.
