    2 lbs oxtail
    2 lbs chuck roast beef
    1 cup green seasoning
    1 tbsp seasoned salt
    1 tbsp meat seasoning
    1 tbsp complete seasoning
    1 tbsp black pepper
    1 tsp ground clove
    1 tsp ground cinnamon
    about 1 cup or more cassareep
    2 cinnamon sticks
    8 cloves
    thyme
    hot peppers of your choice
    1 tbsp seasoned salt
    1 tbsp complete seasoning
    1 tbsp bouillon
    1 tsp black pepper
    2 tbsp brown sugar

    Btw I use the paper towel method too but what works best is usually at Christmas it’s pretty cold here so I put mine outside for a bit n let the fat solidify then I take it off it comes off like butter right off the top all of it.

    I ordered pepperpot soup at a local caribbean place. I was expecting the Jamaican green one, but instead I got this sludgey pitch black bowl of soup that was the most delicious thing I've had in a long time. Glad to learn that this is the Guyanese way! Thanks for sharing.

      Glad you enjoyed our delicious Guyanese pepperpot. It's basically a stew that is eaten with fresh baked Guyanese bread or some eat it with rice. The most popular way is with bread.

    Love the way you did it ❤and explain. Thanks for sharing. I make mine just the way you make it my kids love it but I use to get cassreep from Guyana but some times I but at the West Indian store. But don’t get those nice fresh beef you got. In Guyana we use to go to the butcher at the market. It so different when u buy meet in the supermarket. Last week my daughter bought a pack at B j.       Cassareep is usually very scarce the authentic kind isn't found anywhere but guyana. You can find something close to it on Amazon.

    No seasonings necessary. The cassareep, clove, cinnamon, sugar, pepper and salt from the salted meat is all that’s necessary. I understand the younger folks use seasonings.

      Its not necessary for you love.. that's your preference. I don't use salt in any of my cooking. The seasoning has salt and flavor that I prefer. But like I mentioned in the video if you want to to use just salt, then by all means suit yourself.

    I'll try it , Guyanese in Canada, I was fasting for Christ during Christmas 🎄, I have pepper pot on my mind for the new year, I'll do lamb and chicken 🐔 foot, I don't eat beef and pork, ill pick up the nessary and give it a shot

    I never knew about oxtail before moving here my Jamaican friend introduced me to it and ever since it’s all I use. I find the beef here so stringy but the oxtail is so tender and delicious 🤤 I only use oxtail for pepperpot. I don’t know how to clean the cow heel can you make a video on it??

      The cow heel is cleaned the same way you clean any other meat wash in vinegar or lemon juice.

      It's kinda like pig feet or pig tail it's found in the Asian market or stores. It's very delicious if you like those jiggly textures of meat,

    Hi Candy beautifully done, but I always add a little casareep to marinate the meat wd the seasoning, then add the remaining casareep to cook it.

      Chicken pepper pot would get guyanese cooking card revoked😀😀😂😂 but on a serious note all you have to do is cook it the same way I did with the beef you just don't boil it that long boil it for about 45 mins to an hour on low heat and that's it.

    It's an indigenous dish. Where those people could have gotten those ingredients from, along with refrigeration and pressure cooker? Pepper Pot has nothing to do with "pepper", the same same way there is no chicken in chick pea, horse in horse radish, pigeon in pigeon peas. It is the constant boiling of the pot that is always hot, a "metaphor" you are using by adding peppers in pepporpot. Don't fool people.

      Thank you dear. I don't normally add tripe to my pepper pot I like to keep it simple but any meat in all varieties can be added just make it your own by adding what you like.

    Another key technique is don't eat the same day. Leave on the stove and warm up for 15 to 30 minutes. By day 3.. you have the best pepper pot.

    Looks good, I do mine slightly different as I wld add the cassereep to the seasoned meat overnight.

    Peppapot!!! Pepperpot has always been a Christmas tradition for my family for yeeears. This year, most family members are making their own since we all live far & wide from one another, Canada, US & Guyana. This year, I is making me own to enjoy for myself (Guyanese accent hee hee) I deserve it! I decided to take a peek at your video & learned some new tips, thank you Candy gurl. I'm using scotch bonnet peppers.😜 In the morning, will be making fresh bakes to go along with it & just maybe some homemade bread too.     Oh my god my mouth is wateringggg, this year I won’t be able to have this with beef but i want to try with goat or pork, which has a similar texture to the beef and what what parts should I use to sub the cow foot and oxtail? Thanks candy :)

      The pork shoulder, feet and tail are good parts to use.

    I simply place the pot in the fridge overnight and remove the hardened fat the next day.

    Another way to get rid of the fat is to precook the meats or you can cook your pepperpot ahead, let it sit on the fridge or out on the counter overnight and see the fat settle at the top. Once the pepperpot is rested for 24 hrs, you can easily break off the solid fats that settles at the top.

      @ranisen7930 we never make pepper pot with chicken, maybe try lamb or goat. I have a recipe for that.
