I like this coconut rice recipe
Did you parboil the rice a bit or you only washed it thoroughly? It might be hard if only washed b4 cooking or start burning if not yet done 🤔

No; I only washed thoroughly before toasting. If properly washed, it won't burn because you would have removed the excess start that could make it burn before it's cooked. Then cook it on low heat too so it steam cooks.
