    Terrific thanks....I have a new neighbour called Abdul who's from Alexandria, Egypt and he brings me food that iv'e never tried before, and the flavours are fantastic and now I want to learn how to cook Middle Eastern food...It's soooo yummy 😋 His English isn't very good yet and I don't speak Arabic, but he's just signed up for an English course at college and I'm going to learn Arabic online, so hopefully in a few months we will be able to communicate and become good friends...But for now, I'm here on TH-cam to learn some cooking...I already cook Indian, Chinese, Russian, Polish and French food, and now I'm going on a new adventure 😊🙋🏻‍♂️

    We just made this rice today with kabobs for Mother's day dinner. This recipe is a keeper. It was that yummy. Versatile, would pair up awesome with baked fish. We ordered the cardamom pods and dried limes off of Amazon. We used a green chili from our local grocery store. It's heat was that of a good jalapeno but thin walled, perfect for flavoring. Thank you for sharing this with us.

    That crunchy rice you mention that you save as a “chef’s treat” reminds me of a sort of accidental version the tahdig every Iranian I’ve ever met prides themselves on, or bemoans their inability to get right.

      Yeah Tahdig is insanely beautiful and a dish I want to do really soon. I think with Tahdig though, there is a key to removing the crispy rice without breaking it into tiny pieces.

      Yeah, they do take a few extra steps to make it a more firm sort of...puck? At the bottom, that holds together when the dish is done and flipped over.

      Good to have you here, I appreciate you following along. That's a nice idea, that way you'll be able to make her recipes perfectly.
      I would but the kitchen is quite small and it can also be a bit messy, so sometime I have to crop in to hide the mess. I'll definitely keep it in mind though and try search for a solution!

    Clean rice
    - chop brown onions into medium squares omelette style
    - tomatoes diced into fine cubes
    - optional green chilli into rings
    - black limes
    - sauté vegetables in 2 tbsp oil and butter each
    - melt and add onions, then 3 minced garlic cloves, then add sliced green chillis and diced tomatoes
    - 3 small black limes, 2 bay leaves, cloves and cardamom pods,
    -1.5 teaspoons salt , 1/2 black pepper, 3/4 teaspoon turmeric, 4 tablespoons lemon juice , 200 ml stock until rice submerged .
    - high heat, boil, then low simmer and 20 mins done

    Loved this recipe, thank you for sharing! A question: if you added more stock to the rice, wouldn't you end without any burnt bits on the bottom? In m country we also do rice in a similar way, and I found that adding extra water would remove the sticky rice on the bottom

      Actually those crispy bits aren't burnt, they're fried and they're perfectly edible. It happens because the oil and butter sinks to the bottom of the pot and fries the bottom layer of rice. Adding more liquid would causes the rice to over absorb it and with basmati rice it can go mushy or doughy.
      I quite enjoy the crispy bits, it's a fantastic texture!

      You could try dehydrating lime in your oven similar to how you make black garlic. Hopefully that will work fine. You may be able to order them online too.

    Usually im quite lazy so i just chuck tumeric, cardamom and black lemon into Asian rice cooker and called it a day XD

      That's a great quick way to get all the flavor with less of the work. The vegetables aren't essential, but they add just a small amount of depth!

    This recipe is incredible - many thanks. I made it before with basmati but now I want to try with whole grain brown rice (because that's all we have right now) - any tips or suggestions? The brown rice takes 40 minutes to cook. I am thinking about parcooking it for 20 minutes then adding it to the sauteed vegetables, but that would remove the toasting step. Is the toasting step important in this recipe like in risotto?

      Glad to hear you liked it. The toasting step isn't 100% necessary, so if you are parcooking the rice then it will be fine.

    Ive made this dish and i can say ITS AMAZING ! now i didnt have those dried limes but now i wonder how would it taste if i did . . . Does the citrus taste change because the limes have been dried for so long

      Yeah you definitely can, you add the chicken after sauteing the vegetables then you add enough water to cover it and cook for about 20-30 minutes. Once the chicken is mostly cooked you take it out and place in the oven to crisp up, then you add the rice, but be sure to remove some of the stock so the rice isn't drowning in it! That is actually how you make saudi kabsa!

    Indonesian will love this! Yellow rice is a staple breakfast menu down here.
    Oh yeah! You should check out Indonesian Nasi Tumpeng. It's variant of yellow rice of short grain rice. Instead of using stock to boils it, it uses coconut milk, turmeric, and long pandan leave.
    The rice then shaped like a big cone in the middle and surrounded with various Indonesian side dishes.
    It's the grand menu of Indonesian cuisine because it only serves for special celebration.
    Fun fact: the tip of the yellow rice cone is only served to the most important person of the celebration.

      Oh wow that does sound good, I love Indonesian food! The tip of the rice thing is so cool, we also do the same thing with lamb shanks in the middle east. If you cook a leg, the shank is reserved for the important guest!
