I use half or whole plantain and press it into bigger portions and use as a bun for Jibaritos or Patacones sandwiches or cut in fry shapes and make loaded plantain fries which my kids love. Ghanaian kelewele and guacamole is my favorite snack tho. I harvested a huge rack of plantain yesterday here at my farm so we will have lots of fresh plantains to eat all week.

My mother learned to cook plantain from her ex-husband who was Panamanian. She cut it diagonal when it was very ripe, fried it, then flattened it. She never salted it, soaked it, or double fried it. This is my first time seeing it cooked this way. And we were told to never eat plantains like bananas but to always cook them. We can't leave any food out 😢 so i have some in my fridge. I hope I didn't ruin them. Thanks for the tip.
Nice, I have tried Tostones before, but it didn't work, I will try them again, I will love to serve them up for Christmas Dinner. That Cinnamon sprinkle makes sense, got to try that.
Awesome video again! We eat plantain almost every day in my household. For breakfast this morning, we had baked almost over ripe plantain (I cut it 1 inch thick on the diagonal, put them in foil with butter and a dusting of cinnamon. Bake for about 10 mins)... Delicious! For press fried plantain, I rub a little fresh made garlic salt when I press them then do the second frying. I also make mashed green plantain, stuff it with corned beef and then fry it up like stuffed fried dumpling! Kids looooooove it!

I stumbled across this creation one Sunday when I had already sliced the plantain to fry only to discover that I had no oil. So I tun mi han mek fashan and this delectable goodness was the result

I'm sorry I took so long to respond Nick but I was looking for my grace plantain crisps 😂😂😅 because I don't have any plantain. When I have over ripe plantain, I peel them chop them up, add some flour , cinnamon salt , a little sugar , water, and make some plantain fritters. Delicious 😋. Blessings continually🙏🏾✨️. I use vegetable oil for its neutral flavour and high smoke point. Coconut oil works, great flavour but the unrefined one has a lower smoke point so the oil degrades quickly while frying. Sunflower, Safflower, Peanut, Avocado or Canola works.
